Westy XII. I mean, I don't love quads, but something about that beer is like a siren song, and I'd love to try it regardless.

    Admittedly, I've never had Orval.

The bottle I had was disappointing. I was expecting something along the lines of Goudenband crossed with a quad, but it was thin and had a prominent green apple flavour. I hope it was just a bad bottle.

These days the Westy XII is closer to a hoppy, much more drinkable version of the St. Bernardus Abt 12. About 10 years ago when I started getting them in on an annual basis the Westy XII was closer to a Rochefort 10 turned inside out.

Either way one of the best beers on the planet.

Times are different now but when i started getting into beer I pretty much tried everything available to me. Of all the classics left, there are still just a few I haven't had. For some odd reason Rose de Gambrinus has eluded me for years and Thomas Hardy's ale I will say as well-never had the chance to try it before 2008.

The one great thing about the classics (save for some lambics) is they are usually readily available and consistent. It is great to have such variety today that I can literally travel to any beer/grocery store and find something solid. If I find a Rose I will be content but I am just glad to have had so many great beers over the years.

Pliny the Elder and Anchor Steam Beer to name a few. Basically I haven't tried any of the American Craft Beer classics with the exception of Dogfish Head 60 min (mostly due to a lack of opportunity).
