Oktoberfest's been "fermenting" since Oct. - any value?

    Alright, so I started an Oktoberfest in September, and it should've been bottled in October. It was a Northern Brewer partial mash kit. I got busy with school, then I got busy, then I put it off, then I got busy, and now here I am.

    Is there any value in doing something with this? Has anyone ever tried to bottle such an old beer? I would do it if so, but if there is some reason, any reason, that I shouldn't, then I'll dump it.

    Taste it for off-flavors then decide. Probably wouldn't be worse than green persimmons :grimacing: and many of us have sampled those in our experimental years.

    I had a barleywine that was left in a ferment or for 6 months by a friend and it was great

    If there's dry hops in there I'd say it might be ruined but otherwise there's no reason it would be

    I'm curious about the type of fermentation vessel you use. Also there seems to be condensation on the inside. What temp was the stored beer kept at?
    Don't dump it until you taste it!

    From my not-so-vast experience, I'd say if your sanitation was up to snuff them you're ok. A taste will let you know.

    Taste it. I bet it tastes fantastic. If doing natural carbonation in the bottles then be sure to use a touch of fresh yeast -- something like 1/8 pack of US-05 would work just fine in 5 or 6 gallons. If only a gallon or two then we are talking about a fairy sprinkle amount. Cheers! Hope it turns out great.

    If I switch yeasts I add this to the fermenter. I let it sit a week. If they want to chew on anything it won't throw off my carbonation.

    From one Pat...to another.

    Stick with it.. bottle it. The worst that can happen is that you have some funky, sour, malty bottle bombs. This is how we learn.... Why drain pour a fermenter when you can drain pour bottles at a later date. Hope all works out well.

    I would be a little worried about whatever it is that is floating on the surface. After this length of time, most of the krausen should have dropped, leaving the surface clean. That being said, the true test is tasting it. If it tastes off, you might need to dump it. If it tastes fine, then bottle it. Let us know how it tastes.

    It looks like a "big-mouth glass bubbler" (wide-mouthed carboy) although it could be plastic. They make them like that now to make it easier to clean as well as to facilitate dry hopping.

    Looks like the yeast that are left are finding more things to chew on.
    Take a gravity reading. Taste it.
