Apple Pie Porter Ideas

    I say go buy a porter, some cider, and some spices. Make some blends and see if you can't just make a spiced porter blended with cider.

    NB has an Oatmeal Cookie Porter - 3 gallon so you'd have to use BeerSmith or iBrewmaster to scale it to 5 if you wanted. Were I set on an apple pie style - I might start here and tweak to taste. Everyone tastes flavors different.

    I'd prob go 3 gallons, drop the chocolate and try an apple extract addition at bottling - just to see how it goes and then tweak from there. For me, I'm not a big oatmeal guy but to me it has a bit of that crust/sweet flavor that a pie would have.

    - 5.5 lbs. Fawcett Optic pale malt
    - 1 lb. flaked oats
    - 1lb. Belgian Munich malt
    - 1 lb. Belgian Special B
    - 0.5 lb. Brown malt
    - 0.33 lb. Fawcett Pale Chocolate
    MASH SCHEDULE: SINGLE INFUSION
    154° F for 75 minutes

    Hops:

    1 oz UK Bramling Cross hops (boil for 60 minutes)
    1 oz Styrian Celeia hops (boil for 10 minutes)
    1 Cinnamon stick (boil for 0 minutes—add to kettle
    at end of boil)

    YEAST
    If you chose dry yeast:
    DANSTAR NOTTINGHAM ALE.
    Optimum temperature: 57–70° F
    If you chose liquid yeast:
    WYEAST #1945 NEOBRITANNIA ALE YEAST.
    Optimum temperature: 66–74° F

    If I wanted to make a cider/porter blend I wouldn't be asking for recipe suggestions. I want to brew such a thing, because I think it's interesting. This is a homebrew board, I am looking for homebrew suggestions. Youve made the same point twice, but if you aren't going to be helpful then go elsewhere thanks.

    Did you wake up with a granny smith in your ass? Maybe 4 of them?

    As with most fruit beer, adding the juice of the fruit in place of the actual fruit is a widely accepted practice. If you were to buy beer and blend successfully then that means you could make your own, that's what I was getting at. I say use the juice from your ass apples as a start. :slight_smile:

    I wouldn't be quick to dismiss his suggestion. It has the advantage of being able to fine tune your drink to your liking without brewing a batch of experimental beer and could help get you towards a "ballpark" recipe if you were so inclined to brew it that way.

    On the other hand, it is sort of interesting to think about how to brew it without blending. In case no one has mentioned it, this thread reminds me that former BA forum participant and Zymurgy author Jonny Lieberman once brewed a beer by mashing an entire apple pie!
