    Jk I'd give it a shot. Also trying out clarity ferm with 1/2 a 10 gallon batch. Seems like if alpine can use it and still make magic happen it's a no brainer.

    Brew day just got easier. Just installed a spigot and thermometer to my brew kettle. Water tested and no leaks!

    I brewed a Citra and Nelson session IPA this morning, kegged a Brett rye saison and dry hopped 3 beers...a NE style IPA brewed with Equinox and Nelson, a NE version of Two Hearted and a Citra and Simcoe Wild Imperial

    not really brewing activity, but I did win my first ever award at my second homebrew competition yesterday. a stout i made took 2nd place in its category with a 38/50 overall score

    95% Vienna
    5% cara rye

    Bittered with Warrior
    Flavour/aroma from Styrian Cardinal, Styrian Wolf, Styrian Aurora and will dry hop with Styrian Cascade

    Another hydro sample on my DIPA... Looks like it finished up and hit FG right on the nose (1.014 if not a hair less) - finishing at 7.8% ABV. The flavor is really delicious, quite dank with some pine notes in there... Can't wait to dry hop this bad boy in the next few days and let it go another 5-7 days before kegging. I have 3oz Simcoe, 2.5oz Centennial and 1.5oz Citra for the dry hop.

    I was concerned using S-04 yeast that I would get some weird flavor character (based on others experience I read), but those worries are gone now! Lining up to be the best IPA/DIPA brewed to date.

    After the brew activities yesterday I mentioned in an above post, I ended up brewing another Rye Brett Saison this morning, single hopped with Southern Cross.

    Mash temp of 156 with cologne malt, golden naked oats and flaked oats, smoked malt, special b, special x, carafa 1 and chocolate. huell melon, nelson savin, and mosaic hop additions at 40, 30, and an hour stand with a yogurt sour of oat flakes and polenta mashed at 125 - 133 respectively and boiled off
    3711, and 2112 currently sitting at 75 awaiting action and a drift down the lo 60s.
    estimates are 1054 ish, 31 srm and 51 ibus with a low 5 abv.

    Just brewed my first Gose. Going with the sour wort method - cooled to 115 degrees and pitched some uncrushed grains for the lacto. Hopefully it will be sour enough for boiling on Wednesday night as the missus won't be home that evening and there might be some "off" smells in the kitchen :astonished:. The 3711 starter looks and smells great.

    Brewed a slightly smokey Scotch Ale with Murrican Goldings last week. Next brew is going to be made with Idaho 7 and Amarillo before the end of the month.

    Multi tasking today , boiling sap making dark maple syrup while brewing imperial sap , that is, an IRS using sap for mash and sparge water. Oh is 1.1021, yahoo and listening to guns and roses followed by Lou. reed Live killer day

    Added prickly pear syrup to Rye IPA today...3 days after pitch...high Krausen was easily accessed with new ss fermenter...makes me think an excellent after market product might be a clear lid?

    5 gal NE IPA w Conan yeast, oats and red wheat, a mix of chinook, simcoe and heavy on Galaxy hops.

    5 gal CDA w midnight wheat and carafe II, a mix of chinook, simcoe and heavy on ElDorado hops.

    Busy day. Hired a new beer assistant to make a Imperial. Bottled the SN Torpedo clone. Put the frankenbrew on vanilla beans. Hooked up a vacuum sealer to remove the oxygen. Not sure if it will do anything.

    Did not get as far on the keezer this weekend as hoped...as building the projector screen, and mounting the projector...among other things, took up more of my time than anticipated.

    Still, I've got the collar cut out and polyurethane-d. Decided to go with the natural red oak, both because it has grown on me...and I decided staining was too much of a bother. Ended up changing the design a bit, so I also had to make another trip to Menards.

    Anyway, hope to have the keezer finished by this weekend.
