The academic year begins next week, so brewing is out of the picture for a while. In preparation for this down-time, I had 4 beers in fermenters, three of which merit some attention at this time:
    • Transfer oaked-biere de garde to secondary for lagering. Just completed. I had about 4 cups extra, so I get to drink some flat homebrew, really nice in the oak/malt complementarity.
    • Go to local brew pub for dinner.
    • Keg/carbonate oatmeal stout.
    • Keg/dry hop rye pale ale.
    • Wash three bucket fermenters, airlocks, racking cane, and siphon hose, etc.

brewing my first BIAB (3 gallon) tomorrow, a CDA. Then Saturday after I get off work I'll be doing a chocolate stout to put on a Wyeast 3068 (weihenstphan) cake to make a "belgian style" stout for the fall. Hoping for a chocolate banana something.

Lots to do. New chest freezer (being turned into a keezer) is going to be delivered on Sat. Need to change o-rings / clean my kegs, build my temp controller (have most of the parts), bottle my Blueberry Berliner, and if I have time, brew an inaugural beer for when I get the Keezer done in a few weeks.

Take 2 Saturday on our American IPA got everything last night!! Yeast is starting up and we're brewing at 2:00 PM substituted Wyeast 1056 with Whitelabs California V Ale and Simcoe for Galena hops (none left) should be interesting. We also fixed a couple of newbie mistakes from last time. Increased mash temperature for fuller body and we will pitch our yeast at a healthy 70F this time around!!!

I'm brewing a decently sized Chocolate Oatmeal Porter.. Gonna toss some dutched cocoa in the last 10 minutes, or maybe some nibs I have sitting around.

Debating if I want to age it on some vanilla beans, but I've got time to think about that, and taste it when it's done.

Thinking of brewing a batch to give to groomsmen and family for my upcoming wedding, but have not decided: shooting for Barley-wine style or a porter.

Shit.. Reading this reminds me I sat on my ass all day, and I did not empty my carboys in primary today.

Need to move an IPA over to the keg to dry hop, and then maybe continue to be lazy and leave the blonde in the fermenter.. hahah I just need a cleared primary for this porter in the morning.
