Palo Santo Marron

    Does anyone recommend aging this beer and for how long?

    Yes, it ages fantastically. As to how long, that's a big question mark, I have bottles from the first batch that was widely distributed and the last time I opened one it was drinking fantastically.

    Have one more from 07 that I've saving for a tasting. It ages beautifully and I'd buy some to hide.

    Agreed with everything above. This beer is the shit fresh or aged. Aged does some fun smoothing...

    I still have a few '08 bottles left. The last time I opened one was in late 2010 and it was fantastic at that point.

    I agree with all the above too. Great beer fresh and aged for years to come.

    I've always been surprised that this beer does not get more press on BA. This is one of those "perfect brews" that drinks wonderfully fresh and as it gets older. I'm not sure what's "too old" for this one. Suffice it to day I'm glad you raised the topic. I've got a few bottles older bottles I'd forgotten about......I'm walking out right now to get them!

    Depends on how much you like the palo santo quality itself. If you do then drink it on the fresher side of the fence.

    I had a few of the 08's a few months ago, and they were incredible. This beer is now on my list of things to buy by the case annually.

    I work at a convenience store that has a good beer selection and the beer is gone already. People go crazy for DFH where I am. I never had this one but I do not understand the hype from what I have tasted.

    I found it a little hot fresh. I have been aging one for about 6 months. I have about another 6 months before i open one!

    I thought it was definitely a bit too hot fresh and put it aside largely because I didn't want to drink more of it. I opened another after 9 months and thought it was absolutely awesome. So well rounded. I'm kicking myself for not getting a 4 pack this past release.

    I've had bottles fresh and with about a year to a year and a half of age, and I definitely preferred it fresh. I do have some more sitting in my cellar for more long term aging, so maybe it'll turn around for me.

    How available is Palo Santo in Chicago? is it usually on the shelves year round or just a seasonal?

    In California it is on the shelves year round.
