How much milk sugar to use?

    Do you add the bakers chocolate to the boil? And how many oz of chocolate is your go to??

    It will certainly bump your gravity up. 1 lb in a 1.066 OG beer with London 3 yielded a 1.028 FG for me.

    With that high of an estimated FG I am concerned it might be too sweet. I was looking at other milk stouts and most don't finish that high and I don't want a traditional milk stout yet a touch of sweetness in the back end.

    The beer is inspired by the coffee stout by Sierra Nevada which was in this years winter pack. However, I want mine to be bigger on chocolate and abv.

    I've only done it once and I believe it was 4 ozs, maybe 3. I would have to verify when I get home. It gave the beer a nice chocolate flavor. It wasn't huge chocolate. I add the power in the last 10 minutes of the boil.

    Is that a recipe you used before? I put in .75 lbs and gave me a 1.028. I thought that might be high so I lowered the mash temp to like 152. If you've used lactose with a FG of 1.028 and it wasn't too sweet then I might let it ride. Experimentation is the fun part.

    Yea it wasn't what I would call too sweet. But it wasn't a beer I really enjoyed. But I don't know that lactose is the reason I didn't like it necessarily.

    3oz of chocolate in the boil. 5oz of nibs in the secondary.

    I have definitely had commercial milk stouts where I thought there was too much lactose. I was skeptical about 1 lb, but figured that since I was using it for the first time, I would go with 1lb because it seemed a typical amount. But maybe I would have liked half a pound even more. It was also my first time with nibs, and yeah, 4 oz is by no means over the top, but you know me and my bland, muted, middle of the road, upper Midwestern sensibilities. I actually look for beer in my beer.
