New (to me) hops

    FWIW my one experience with homebrewing with Equinox is that this hop tastes like a 'blend' to me. I have never experienced so many differing flavors from a single hop variety in my homebrewing experience (20+ years).

    I personally really like galaxy hops as bittering and aroma additions and then hop bursting with citra for some intense passion fruit and citrus, but I'm definitely a juicy IPA kind of guy. Both also work really well as dry hops.
    I'm not a huge fan of the green pepper flavors that equinox brings to the party, and mosaic are, likewise, very hit and miss.
    That being said, I've also had some killer single-hop mosaic brews, so i think I'm just real bad at using them.

    I like Mosaic, but it's one that you have to treat gingerly (IMO). It's a very potent flavor addition that can verge on being unpleasantly sweet if you over do it. It does, however, go very well with a combination of Citra, Galaxy and Chinook, heavy on the Chinook.

    Well I like to make sure the music's not too loud, and speak to them in hushed tones. When it's time to put the Mosaic hops into the boil, I don't use more than an ounce for five gallons. That's just me though. Some people might think their Mosaic can stand up to more.

    What about dry hopping. Do you have some rules there?

    I didn't think so, but looking back, it's never more than 25% - 30% of the total. In that case it might be more due to the fact that I like other hops better as opposed to Mosaic being too strong. It's not something I've really played around with a ton to be honest. Some might say I'm stuck in a rut, but really, I just love the hell out of Chinook, which leads the charge in probably 80% of what I brew.

    It sounds to me like you know what you like and you brew accordingly.

    The beauty of homebrewing is that we can make what we like.
