oh and the "scale up" comment: usually we write the original recipe with the brewery in mind, so it's written for that particular equipment, batch size, and water source -- we only do homebrew pilots these days if we are testing an unfamiliar microbe or specialty ingredient. The scaling that does happen more often is if we're moving a beer between different partner facilities, like batch 1 tesseract was at beltway (60bbl), batch 2 was at flagship (30bbl), and batch 3 was back at beltway (90bbl).

these maples are unfortunately turning into a game of russian roulette. seems like there's eleven rad bottles and one drain pour bottle in every case. total nightmare for us, you can imagine.

Which is why I've heard using maple is a nightmare and why very few breweries have the balls to do it. Kudos to Grimm for putting out a solid beer. Also, everyone thinks they're a cicerone now and I would say 90% just make off flavor's up in their head.

    -Cheers!

Drinking a BA Maple Double Negative purchased at Provisions in Orange ... This is a pretty fantastic beer when it warms up a bit.
