    “Doors open to the public Saturday May 7th 12pm;” like the look & strategy…sounds promising?


    “Lagers will be available once we add some extra fermentation space down the road…We realize hops currently rule, so a few of those beers will certainly be hop forward. As beer drinkers, we enjoy many sour and wild styles and as we grow will incorporate a barrel program. Plans are to get some red wine, white wine, rum and whiskey barrels.”

    I been waiting for a local brewery that will be more sour-centric. I'm excited to give them a try!

    Science experiment at first, then dialing in: Trial and error before fine-tuning?

    I have plans also but Twin Elephant is less than 2 miles from my home so it's easy to fit a vist in.

    Nice. I have plans like, the whole family is coming to my house at exactly noon that day for a Mothers Day weekend gathering. But I will make it at some point.

    It is a lot, but two of them have been brewing together for a decade, and the other has 6 years under his belt. Consequently, when I hear "Much of what we brew will come from our homebrew recipes," I take their history/experience into consideration

    Starting off with variety may warrant negativity, but the receipes here (may) have been worked/perfected on over the last few years...we shall see. Regardless, I think they have the right attitude: "We want to make the tap room an educational experience...Not a bar, but a place to discuss and learn about beer.”

    Also, appears as though these lads like to experiment with yeast strains and make funky saisons, which may lead to that nice sour barrel program

    I moved to Madison about a year ago from Boston, and really suffered in terms of brewery access; this part of Jersey seems like a bit of a black hole in terms of breweries, so this is welcome news. I know a lot of folks who will be checking it out. If they are even pretty good, I expect they'll get a ton of traffic.

    I agree it seems like a broad selection for a start and an unusual one ('brown porter'? 'Red Kolsch'?) but I'm certainly hoping for the best. I doubt I can make the opening, but I'll come by as soon as I can.

    That is a fascinating lineup. Please don't shit on these guys if they don't put out a HH/0dub level IPA first try! We need more Jersey brewed saison, Kolsch etc

    I doubt anyone will hold them to that standard. I know I won't. If Twin Elephant brews a good Porter, Saison, IPA and Red Ale I will be very pleased.

    Maybe I'll see you there if I'm not working that day....I live 30 miles away, but I do have special ties to Chatham.
