    Its not the hop flavor profile I'd want in a saison. to me there are limits on what could or should be hopped with what.

    Rob, 13 star was brewed by our previous head brewer and he hated this beer because it was outside of his perfered style range. everyone at the brewery thinks he purposely made this batch awful on purpose. If you come to the taproom I'm sure you'll find something up your alley especially with Chris prout as our new head Brewer he is creating beers in styles we previously haven't done.

    You aimed your question at @ecpho , but since I brought it up, I thought I'd chime in. I didn't think the beer was bad. I didn't know anything about the beer when I had it. After the bartender poured it for me, he asked me what I thought of it and I told him that it tasted too much of American hops. If I presented this beer blindly to many here and asked them what kind of a beer it was, I bet a good amount would think it was an IPA. The dry-hopped citra covered up what saison-like characters might have been present. All this means is that I was disappointed by the beer based on my expectations. It wasn't a bad beer and the there is nothing "wrong" with the design... but it wasn't for me because I don't want a saison that tastes remotely like an IPA. I'll still try any Gun Hill beer on a taplist though.

    So you're of the opinion that certain styles should remain the same as they've always been, despite many of them being around long before these hops were even discovered, let alone shared with other countries?

    There's likely a way to balance those two characteristics and not have the beer taste like an IPA.

    One way is to only use a judicious amount of Citra hops for dry hopping since it is a very potent hop from an aroma/flavor perspective.

    I recently homebrewed a Cranberry Belgian Pale Ale which fermented using a Trappist Ale yeast strain (Wyeast 3787) and dry hoped with 1 ounce of Citra hops (for a 5 gallon batch). Right now the beer is a tad more on the "IPA" side but not drastically so. As this beer ages the hop aroma will fade and the beer will be more "Belgiany" (i.e., the yeast derived flavors of ester and phenols will be more prominent). What is the 'best' balance here? Beauty is in the eye of the beholder.

    I don't think a Kolsch should be dry hopped with mosaic, citra in a Saison, etc. And still call these beers by their traditional style names. That's how we get a trillium Kolsch as the top rated for that style on sites like this.

    You want beers that stray a hop from tradition to receive a different name entirely? Must every new hop varietal demand a new style moniker?

    I think this is why a lot of breweries are saying ex: a "insert style" inspired ale instead of calling it by that name, stating that the inspiration came from that style of beer but might not be considered that style by traditional terms

    Upcoming week:

    EC1 : East Coast IPA - Getting kegged this week on draft Friday June 17

    Proclamation: Pale Wheat Ale - getting kegged this week on draft and cans Saturday.

    In the tanks,
    New fruit beers, pink guava and apricot gold on draft end of June.

    June 18 we are having a can release event, Fresh cans of EC1 & Proclamation pale as well as the last cans of our last void of light run. Food vendors will be on site.

    Bobby trap kicked in the taproom! Had become a taproom favorite even at 7 % abv.

    Common sense Cream ale is tasting great, also a crowd pleaser! Perfect incredibly easy drinking summer brew at least for me.

    Batch 2 of rise up rye is in the tanks going to get kegged in a couple of weeks. This beer will be out in kegs and most importantly being sold at Hamilton! Due to the great number of people who asked and demanded the beer be sold at the play they have gotten this beer in there, just goes to show what can be accomplished when enough people ask for it.

    I think the first brews going into the Grundy tanks will be the pink guava golden ale, it's our golden ale fermented with guava, no souring agents just a nice refreshing gold ale, fruit beers are pretty popular in the taproom for the visitors who are new to beer or non beer drinkers and are checking out the place out of curiosity.

    Canning day was a success, see you guys Saturday.

    15 Bbl batch of cans, for point of reference this is about half of an other half yield.
    we wanted to spread out the love of this beer and kegged the other 15 bbl's so incase you miss out on cans or can't make it out to the brewery plenty of locations will have it on draft.
    The Bronx Beer Hall will feature it all month long so for the most part they will be a good place to find it on draft

    Some of the cans are going to be heading out to some of our accounts.

    EC 1 is tasting delicious huge showcase of mosaic and citra.

    Proclamation is the ideal summer
    Beer for me super light some citrus forward flavor not overly sweet.
