Thoughts on using sorachi ace and citra together?

    I was thinking of using sorachi ace and citra together as the late addition for a saison. Has anybody tried this mix?

    No...Sorachi Ace is the spawn of Satan :wink: I'm not a fan of Sorachi Ace except in really small quantities and really dislike the almost dill flavor it comes off of to me in the flavor department. I've tried at least a dozen SA beers and only found 1 that I could drink, and it was a real minor addition in that beer. But if you're a fan of Sorachi Ace and have experience with it, give it a try! Seems like it'll be easy to cover it up/mesh with Citra and a saison would be a good style to meld it into.

    I've only tried one beer with it and I enjoyed it. I'm the type who has to learn lessons the heard way. Imma give it a go I reckon

    I also hate Sorachi :slight_smile:

    What yeast are you thinking about? I did a Sorachi Saison with Belle Saison and it ended up very dry with the same mouthcoating feel that I get from Sorachi. I also did one with either Dupont dregs or 3724 and did not like that either.

    Go gentle with the Sorachi or you are just wasting the Citra.

    Sorachi Ace is less popular in these parts than a fart in church. Because it sucks.
    Citra is wildly popular. Because its good.

    I don't really know too many people that can claim to be experts with SA because like passing a kidney stone once is enough.
    I know that didn't add to your question but just keep in mind that SA is really, really hated and I want to make it clear just how awful it is.

    I love both Sorachi and Citra. Separately. I would not recommend them together. On the other hand, who knows, maybe you or I would like it. They're both very powerful and very different. Together they might just be.... weird. I dunno. If you try it, let us know how well you think it turns out.

    My other choice for this saison would be bavarian mandarino by itself. I usually use mosaic as a late addition but I want to try something different.

    I am brewing a 5 gallon batch and splitting it between yeasts. I will either do one with 3711 and one with dupont. The other option is pitching dupont then 3711 when it stalls and a brett blend I have in the other.

    @ghostinthemachine I do like SA, so if you make it and it turns out, might have to drive to LA to have a pint. I guess that makes me a spawn of Satan

    FWIW, if you are going to pitch dupont, then I would just let it go until it is finished or I would just use 3711 from the beginning. I see no real benefit of mixing the two together.

    The auto tuning capability of Citra should work in enhancing the positive traits of Sorachi while also negating its more polarizing aspects.

    I've tried a mix fermentation with them before. I kind of got the best of both worlds. Bone dry in two weeks.
