Tumbler Clone - first BIAB recipe try

    Here is my first go at designing a BIAB recipe. It will be a clone of SN Tumbler Autumn American Brown but with some English twist.

    Batch: 1.25gal
    Mash: either 1.5gal at 154F w/ .25gal sparge or straight 1.75g infusion
    Boil: 1.75gal (60min)
    Efficiency: 65% (best guess for first time)

    Grain:
    2.5lb Northwest Pale
    6oz Carastan (37L)
    2oz Pale Chocolate
    1oz Smoked

    Hops:
    .33oz Willamette@60min
    .67oz Willamette@5min

    Yeast:
    Mangrove M15 Empire

    Predicted stats
    OG: 1.060
    FG: 1.016
    ABV: 5.66%
    IBU: 33.91
    SRM: 18.30

    I did a couple calculators of strike temp and they seem to think I need more mash water than I am using - 2g or so. Is that accurate? I can get a bigger kettle if needed.

    I would say that it depends on your boil-off rate, but knowing my stove and pots, not that I do small batch brewing, I would need somewhere around 1.75 to 2 gallons minimum to hit 1.25 finished. I would think I'd rather err on the short side than the high; it's not a big deal to add top-off water, either before or after the boil, but not so easy if you end up high. You can extend the boil, of course, but that my add its own issues.

    I was surprised to see smoked malt, but I checked the SN site, and sure enough, smoked malt is listed. I've only had it 1x, but I'm pretty sure I would have remembered smoke.

    I always caught just a hint of smoke in there. From a recipe straight from the horses' mouth, (Thanks, @sierranevadabill ) there is just a couple percent of smoked malt in the grist.

    I never tasted the smoke either but its listed. I took liberty with the hops and 2-row to make it a NW/UK hybrid.

    My boil-off rate has been roughly .5gal/hr which is where I came up with 1.75 boil volume. Is it possible to use 1.5gal strike water with the grains and then sparge or just add the remaining .3 or .4 gallons to get it up to 1.75.

    On the other hand I could go up to a 3 gallon pot which I could justify to the boss by saying we can use it in general cooking.
