Send ova the Atrial Rubicite first

Should of used quotation marks; nonetheless, wouldn't be surprised if Dan incorporated some of the "new" guys in there

If you ever learn which specific hops were used to brew that beer I would appreciate hearing about it.

    Cheers!

"Come join us for a chill little Thursday night draft event at the blind tiger in the west village tomorrow night. We will be pouring 3 lager beers as well as 3 hoppy little ales...our farmhouse-type/mixed culture offerings won't be ready until the fall. We haven't started regular deliveries to Manhattan yet, but the chance to pour our wares at the tiger presented itself as a golden one for us."

Hecto blew me away. I really think it's the best pale ale I've ever had from a New York brewery.

I think it may be the best I've had from any brewery. It blew me away as well

Alert from our marketing department: we have new glasses for sale specifically intended for our mixed culture "country" beers. The beers aren't ready yet but the glasses are ready to roll.

Walk Don't Run is on tap today and it is fantastic.

I found this brew to be immaculate; the New Zealand hops really shined bringing out some connotation of tropical fruits, lemon, citrus + the body/mouthfeel was so clean, crisp, and pleasingly drinkable (i.e. not at all watery for 4%). WALK, DON'T RUN is a perfect balance: dank, grassy, juicy, complex…wish I could run up today and grab a growler, and also check out Believe You Me

    Cheers to you -

Just got a chance to try 5 different Suarez brews (Palatine, Small Talk, Crispy Little, Homespun, Believe You Me) and they were all incredible. They are already churning out some of NY's best beer. So much flavor for the low ABV package, and just an unrivaled mouthfeel on all of them.

I feel like one of the main reasons Hill Farmstead has always been one of my favorite hoppy beer purveyors is how great the mouthfeel is on the beer- creamy and full, but still light and airy all at the same time. It seems like Dan Suarez has certainly taken a page from that playbook from his time there and nailed it with his own beers.

I can't wait to try anything and everything I can try from them. So good!

That is an excellent description. It does seem to be a paradox that a beer could both be creamy/full yet light/airy. I suspect that this is a quality of the brewing water used but it is just a guess on my part.

    Cheers!

Suarez was with Sean from the onset:

“Dan Suarez, who happens to be a brewer at Sixpoint Brewery in Brooklyn, visited us for several days during the planning of our first brew.” (http://hillfarmstead.com/main/2010/4/16/reflections-on-the-beginning.html)

Perhaps it’s the other way around:

“Dan is my creative sounding board and nearly all beers for the last 2 years have been born out of creative discussion/sampling/obsession/interplay with Dan. Every beer is a collaboration, to some extent...” (https://www.reddit.com/r/beer/comments/1cea2d/i_am_shaun_hill_brewerowner_at_hill_farmstead/)
...Regardless, I think we got something special here; can't wait for the mixed-fermented goodies

Good information. Didn't know his exact timeline at Hill Farmstead. If he was such a big part of so many beers there, it's no wonder he's already cranking out awesome beers at Suarez Family.

Damn. I hope a mod corrects my spelling of Sean above...I guess my phone did not like Shaun.

Anyways. Ya. Not easy to start off as strong as Suarez is currently doing: nearly flawless
