    After introducing Dupont's Bons Voeux to the mix, I thought I'd feature a few other beers that are fun to look at in relation to the entire idea of a saison and a farmhouse ale. Sticking with Dupont, we have this brew:

    Dupont La Biere De Beloeil

    Chateau Beloeil is a historical Belgian castle a few miles from the Dupont brewery. Dupont brews this beer "in its honor." I seem to remember once hearing that this beer was only available at the castle at first. Don't think I made that up.

    This beer is listed here as a Belgian Strong Pale Ale. I've also seen it categorized as a biere de garde and a saison. I could imagine this beer being listed as an "amber" in Belgium. It doesn't appear to be currently listed on Dupont's site. This bottle is three years old.

    Despite the age, this beer is still quite nice. The Dupont character is evident. It's dry, but it's also rich, fruity and malty. There's a little bit of tartness (from age?). It's herbal but not very bitter.

    Dupont describes this beer as a dry, chestnut colored beer... with caramelized malt and the Dupont yeast.

    Just try rating this beer "to style" and see how that goes. Is this a case of some beer fans considering this to be a saison, while the brewers would never consider it as such? I don't know, but it tastes good.

    I don't remember tasting ginger but I have three more so I will let you know . I never thought too much about the name as beer can be kept in cellars. Morning, or evening or . . . something.

    I love that one, and tried to rate it based on, well, the way I normally rate things and seemed to have no trouble :slight_smile:. I have it in the mid 4s.

    Here it is. Chicken with Grapefruit and Sage. I paired this dish with Sitllwater's Cellar Door and with the original inspiration for the dish, Upstate's Double IPA. Cheers everyone!

    The food always ends up in thread without the food. :grinning: Because that's where I made it. I only had one of the DIPA but I loved it and said I have to cook with this grapefruit and thyme or grapefruit and sage. I like the idea of bringing flavors together across a technique. So a chinese style presentation with slightly different flavors. I have some ideas to embellish this dish but I am going to wait because I made a mess.

    I think the same beer but different food pairings would be much easier and a better place for the variable (if I'm reading you right)... but that's a great idea.

    @TongoRad , I mean - different people post about a food pairing in a thread, and all the different people have the same beer.

    It's not exactly my idea but thanks. I was reminded of something that I read in a David Rosengarten book some time ago. It's about wine pairing, but the same basic principle could apply.

    Basically, you take a certain food (like pizza, for instance ) and try it against three different pairings each selected to be a good, bad or neutral choice. Then you can experience the differences first hand and hopefully learn more about the basic principles involved. I've done this before and it was both fun and instructive.

    As to a possible beer thread, it may take some time to put it all together; in the book all of the pairings were pre-chosen for a purpose.

    Anyway, Maria's post coaxed it all out of the aether of my brain :slight_smile:

    Cool. That could be part of the same thread, and people could post whether the pairing is good, bad or neutral. Maybe as a preliminary round. Then later some examples could be culled for a group thing.

    That would be pretty cool. Reminds me of those funky looking "food notes" that Tröegs has on their website for each of their beers.

    BA Magazine has a feature each month that I enjoy where they do three pairings for a dish, but it's always three beers that go well with the dish and at least two of three are often very similar. I like your idea better.

    I like being the guy who is always a little out of step. I don't think a food pairing is out of place in this thread. the saison, the table beer is meant to go with food.

    Such a well done thread. I hope to contribute very soon. Going up to Vermont for 1st time ever and hit all the main brewers & top bottle shops. Plan to bring back many bottles, some I'm sure will be saisons (amongst a oversized muling supply of IPAs of course).
