Rye Winter Solstice Ale...35 min boil, 14% Malted Rye, 7% Flaked Rye, CTZ, Mosaic, Simcoe...looks and tastes like a darker, more assertive NEIPA at this point.

How did you arrive at the 35 min boil? I've been toying around with the idea of doing a shorter boil but haven't seen a consensus on good target. Trying to get my brew days under 4 hours even for hoppy beers.

This is another reason for doing a shortened FWH (30 Min)...5 min after pulling my bagged bittering bittering hops out of the kettle, I decided I was cold and it was getting dark
From what I remember, I was also running behind from a slow lauter of the 21% Rye.

Had my first bottle of barleywine. Terrible. When I bottled there was no wood presence to speak of, now that its carbbed thats all I taste. Gross.

I believe that is a flavor that may mellow over time, and barleywine is a beer that should age well. So all is not lost.

I was thinking I could blend it as well. I won't play with wood again.

This is interesting. I've been reading about raw ale on Larsblog (see here and here), and your post made me realize that a short boil (or even no boil) may be perfectly adequate for a lot of beers, not just Berliners or traditional Norwegian beers (maltøl). If most/all of the hops are going in at the end anyway, why bother with an hour-long boil? Food for thought. (I do think that DMS control might preclude a really short boil, but that is probably manageable.) It makes me wonder if you could brew a no-boil IPA (and particularly NEIPA). Could you get enough hop character at 180°F to get away with no boil?

Sour ale with rye, wheat, pilsner, flaked oats, and a diverse group of yeast and bacteria. First mixed beer I have brewed, both beers in this recipe had similiar recipes, but fermentation situation varied
2/3 2 month old sour with no fruit
1/3 7 month old cherry sour
My main reason for mixing was the cherry sour, was absurdly sour with a ph of around 3.2 if I remember correctly. Could not taste any other flavors. Now it has a nice bit of funk, grassinesss, lemon/orange citrus, with a bit of malt. It probably could have used a little oak...

On my above post, I should have said my first blended beer not my first mixed.

Also drank Homebrew dunkel last night. Tasted good, but drank more like a porter. Has been lagering for about 6 weeks in the keg. It was brewed late November. Hoping it will still get better...

Have a German pilsner in a keg lagering and hoping it will be ready at the end of the month.

Have a sour with peach and another sour with pineapple still in secondary. Both will need at least a couple more months.
