Favourite Combinations of Hops

    Willamette is used, but it's acreage has been going down rapidly. The main user was AB, and they quit buying it around 2008-2009. Willamette was derive from Fuggles, so it is often used in British styles such as ESBs, Porters, Stouts.

    As single hops I prefer a well done Citra, but some beers IMO just have the hops throw in. Some good most mediocre. I like Chinookered by Lawsons, it's a great beer. I've had great Moasic only and ones I didn't care for, again well done in on the Brewer to use the hop right. Done wrong it's cat pissy and unpleasant at least to me, I've got a low funk factor. It blends beautifully however.

    Homebrew I make is 50% Simcoe, 25% Centennial, and 25% Cascade for hopstand and dry hopping additions. Best smelling beer ever.

    I love Mosaic, I love Simcoe, I love Galaxy, and I love Equinox (or Ekuanot or whatever). I am not sure I have had them together, except for Mosaic and Galaxy, but I would be curious!

    I'm partial to Saaz, Hallertau, Fuggles, Golding, Challenger, Cascade, Simcoe, Centennial, Nelson Sauvin, and Cascade again.

    I'll have to try that combo sometime. Those are my two favorite hops.

    For my preferred combo, I'll go with Citra with a touch of Amarillo, a la Pliny the Elder.

    I've had a lot of great IPAs recently with Mosaic and El Dorado, such as Odd 13 n00b and Weldwerks Juicy Bits (which also has Citra). I like the combo of Simcoe with classic west coast hops like Chinook and Columbus, like in Odell IPA. And there's nothing wrong with the good old Cascade+Centennial+Chinook combo!

    A lot has to depend on what the yeast is doing too.

    There are beers that are very abrasive and bitter that are Citra hopped, and there are are beers that are very fruit forward that are bitter forward like, Columbus, centennial, etc.

    I do something similar, just replace Centennial with Mosaic. Incredible beer!
