Planning a split batch 11 gallon IPA (one 100% Centennial, one Brett IPA with no flavour addition). Whether I get to pull it off or not, we'll see.

Getting to brew a Lambic on Monday. 65% Pils, 35% Flaked Wheat, 1.4oz Aged Hops, 3 hour boil, chill overnight in the garage with the lid off. Still debating what to ferment it with though. I have the yeast cake from my Lambic from last year that tastes great that I could repitch. I also have 1/2 gallon of Wet Hop Brown Ale that was left over that I let spontaneously ferment that I could use as a starter for this batch. I can add dregs from multiple sours. Combo. What to do, what to do...

Pitch them all and let the wort sort them out.

Tasting my Lakefront Bridgeburner kit that was bottled 2 weeks ago. Plus using all my willpower to NOT open a bottle of my Cider Wheat Ale I bottled last weekend, expecting it will need another week min.

On top of that I'm also brewing up a Brickwarmer Holiday Red partial mash kit (from northern brewer). But I plan to add some extra grain (honey malt, maybe a bit of extra chocolate, and some victory breiss), maybe a bag of brown sugar to up the Gravity, plus using white Labs Farmhouse ale yeast that has Brett in it. Should be pretty interesting when it's done.

I plan to bottle up a few gallons of dark mild and a belgian singel, then use that yeast to brew an ESB and a Dubbel. I'm looking forward to it. I haven't brewed a dubbel in a couple of years.

What's your recipe for the smoked mild? I know I've shared mine on here, but can't remember exactly with whom. Either way, enjoy. I love that beer in the fall...here in SC you can sit outside with 4-5 pints on the weekend and enjoy the nutty, slightly smoky flavors while getting only slightly buzzed. Great stuff.

    I may go berzerk.

I have everything ready for a BDSA (already cooked the sugar a la ryane's recipe) and a Porter. I am about to grid the grain for the BDSA and the Porter right after that.

I have a 3200ml starter of 3056 that will be done in plenty of time for a 10 gallon Weizenbock.

I also have some Stillwater Saison yeast I can use. I also have enough WY3787 left over from the BDSA starter for a Belgian Single if you will.

The Amber I brewed up last week is about done and I could use that yeast for a Barleywine. I listed these in the most likely order to be brewed.

I have the re-yeast measured out to bottle up 10 gallons of Tripel that has been cold conditioning for a month, I just have to finish cleaning and de-labeling a few bottles. This will be done fore sure.

Filled up the spare propane tank.

Of course, there is rain in the forecast. Maybe I will pitch a tent or set up a tarp or something.

Brewing up a 10 gallon batch of Milk Stout, 5 of which will be receiving a treatment of dates, currants, raisins, and apricots - a "fruit cake" stout if you will.

Taste my pumpkin ale that has been cold conditioning, sample my imperial stout that has been resting in a 5 gallon Crown Soaked oak barrel for a week, check the gravity of my split batch saisons that should be done fermenting, keg the remaining 5 gallons of my hoppy wheat beer, add cranberries to my orange blossom mead to age for another month, and watch the Huskers @ Ohio St and drink some home-brews as well as some others! Busy dude right here!

    Cheers!

Kegging my first batch of Saison this weekend. It was a 14 gallon batch of Citra Rye Saison fermented with ECY08 that will be split into three different kegs. One plain, one dry hopped with more citra than noble hop, and another that will be dry hopped with more noble hop than citra. Probably brewing an all Riwaka hopped IPA and lagering a kolsch next weekend.

Dry hopping a Nelson/Amarillo/Citra APA. Maybe brewing a breakfast porter that I really liked last year...oatmeal porter with some coffee and chocolate, perhaps some vanilla.

I'll be drinking my chocolate oatmeal vanilla porter that I tasted a bit yesterday...

But I'm going to be brewing a good brown ale. Nice and nutty with some oats in it too. Something nice and "fall" like, but enough to kick back and have a few. It's got a MO, C60, Victory, Chocolate, Oat, and Special Roast in it. Fuggles and EKG with some 1099 to eat away at it.

I also made up a 4.5 gallon batch of cider tonight. Had to get that going for Thanksgiving, for the various family and extended family that enjoy it.

Past that.. just going to enjoy a free weekend, some football, and the fact that my kegs are filled.

Bottling a pale ale that I hope will carbonate sufficiently for an Oktoberfest party on the 20th. And crossing my fingers that the onion/catty aroma will develop into something more palatable.
