    Brewing 2 batches. One to use up the last of the cascade/centennials on the vine for another wet hop ipa since the freezer is full of hops. Then a stout. Lots of dry hopping these days, the only bad is the loss of wort. But me loves the taste.

    It's basically JZ's mild recipe from BCS, the crystals bumped up to from 60 & 120 to 77 & 150 (didn't want to go with briess, these were the closest english equivalents) and subbed out 1# of pale malt for weyermann rauchmalt. First time I've tried it, here's hoping.

    Bottling a White IPA heavily hopped with 50/50 Zythos and Ahtanum. Next weekend will probably be a SMaSH Pale ale with one of the many great hop varieties my LHBS seems to be able to get too easily. They had Falconers Flight last time I was there, it may very well be that.

    I brewed a Stone 2007 Vertical Epic clone yesterday, and on Saturday I'll be brewing my first sour. Roughly a lambic style grist, barely bittered with fresh hops, and with both Wyeast 3787 and the Lambic mix pitched in right away. I'll then be taking the carboy upstairs and hosting a small sour tasting Saturday night, with dregs from a few favorites pitched in as the night goes on.

    just got a shipment of grains and hops for two more beers, a RIS and a Cali Common, still a few weeks from both. Sunday I'm brewing an Indian Brown Ale that I like to keep as my "house" beer I have an IPA that's close to ready to being bottled but I might not get to it right away.

    It is the method that uses base.
    The only difference is I use yeast extract instead of DAP. I have made it in the past with pretty good results, but I just tried the stuff I made the other day and it is less impressive. Maybe it is the coffee and not having brushed my teeth yet:astonished:. Made on a different stove than last time too so times may need to be different.

    I did one pound for an hour and another for 20 minutes. Last time that worked pretty well in a BDSA I tried side by side with Rochefort 10. Mine was no Rochefort 10 but I was living in the same neighborhood. Dark fruit (from the longer cooking I assume) and a pretty neat toffee/butterscotch from the shorter cooking. We will see what happens this time.

    Sunday, I'll be brewing "GumballHeady", a riff on Gumballhead. Hoppy american wheat, with simcoe and amarillo, fermented with Alchemist's Conan yeast, cultured from two Heady Topper cans.

    Just bottled my second batch yesterday, a hoppy honey saison. making plans for my next brew, some sort of pale ale or ipa with some Nelson & motueka that I picked up.

    i'm thinking my Citra IIPA is in the works this weekend - my last batch of this resulted in my first infection, but i think i tracked down the culprit and really need to get back to the original recipe

    Try the Falconers Flight 7C's if you can get it. I did it in an IPA recently with Maris Otter and it's been really well received by friends.

    Its my first time using "Rice Syrup Solids"

    Been curious.. found straight up Falconer's blend to be pretty much generic hoppiness... what do you get from 7Cs?

    I've heard the "mehhh" from the play Falconers Flight, but the 7C is pretty good I think.

    I like the "C" hops, obviously in an IPA mostly.. I think it blends a good bit of everything in there and while I get the plain jane hoppy flavor, there are also some parts that pop. You get a bit of that spice from Chinook in there, a bit of that earthy floral character seems to be prominent throughout. Then you get the great citrus from the Cascade and Centennial, and Citra in there.

    It's pretty balanced if you are going for some citrusy, danky, spicy-earthy deal... Sounds busy, but it's pretty good together I think. I dry hopped mine with 1oz whole leaf Citra in the keg, and added 1 oz of Cascade around 10 minutes left too.

    Bottling a 7.5% English Brown and brewing a 6% Saison with Wyeast Forbidden Fruit and Calypso hops.

    Thanks, that helps. The flavor profile sounds good. I did something similar with my Falconer's beer, where I supplemented the dry hopping and boil additions to get some stronger flavors on top of the misc hoppiness; beer turned out well. I'll have to give my 7C's and Zythos a shot in some upcoming beers.

    No problem man. I like you figured the hops to be a mash up of all the good stuff, and I wanted to use the same hops, but bring some out to the front. Wanted the Cascade in the flavor/aroma in the boil, and wanted the fruity dank Citra to shine in the aroma and finish.

    I'd suspect Chinook would be ballin' if it was amped up with some FF7C's.

    Finally got around to actually making my English IPA all-grain. The post is almost two weeks old, but I got occupied with working and couldn't actually brew it till today. Having a few homebrews while I'm brewing, naturally!

    Also watching some football. Might open my bottle of Black Butte XXIV* later on, or might save it for tomorrow. :grinning:

    *(yes, I still have the ones I've promised to trade) :rolling_eyes:
