    TG getting ready to start canning soon in Decorah according to twitter!! Can't wait to have fresh Sue instead of the stuff from FL!

    Must say I just finished a DDH Pseudo that was bottled 5/14 and wow that beer has held up well! Still tons of aroma, zero signs of oxidation. However the amount of yeast sediment is insane! Wouldn't even need a starter, just pour the last oz. and you'd be all set for 5 gallons. Not that I really care, just thought it was interesting. Anyone ever got out of them which yeast they use for hoppy beers. I think I've read they don't have a "house" yeast but use different ones for different beers.

    There is a thread on HBT about cloning pseudoSue. Someone emailed Clark and his response was this:

    "Good call on harvesting some yeast, as we usually leave plenty in our beer and as you know it is never filtered or pasteurized . S-05 however would be an excellent choice (and better IMO) and you will not risk the little nasty’s that live in a lot of draft facets. That is a great recipe you have, and I would like to try it myself!

    Although we are pretty open on most of our ingredients and hops used in our beers, we guard the pseudoSue pretty closely!

    That was several years ago so things may have changed.

    Here's an excerpt from an article in 2015 discussing an interview with Clark:

    Today, all of Toppling Goliath’s yeast is flown in next day air from California from White Labs. Clark says they tend to use different yeasts for their unique components so the beers will taste differently. “I don’t want a house yeast – we will never have a house yeast – we’ll always have different variants,” he said.

    Really looking forward to trying the cans out of Decorah. I think what became DDH Sue is the original recipe to move it further away from FL cans, and regular Sue is now no where near what it use to be but still 10 times better than FL Sue. Hopefully this will remain the same and maybe it will even improve in order to fight the stigma the cans now currently have, and come out with them hitting on all fours.

    Wonder if the price will change compared to FL Sue. Normally can grab that for 8.50 when I come down to Madison. Really hoping that doesn't change, unless I'm getting quality Sue, then you can change the price TG.

    Thanks for the reply. Funny he recommends S-05 but also clearly states they use White Labs. I know 001/1056/S-05 are close to the same but still. I would bet it's not one of those that they use.

    I added myself. Likely will be at C&C for the share most of the day Saturday. Maybe heading over to TG for the public opening. Carpooling might be tough this year as we will have my 1 year old in the car.

    Not sure if anyone has asked this yet but on the Mornin' Delight event ticket it says we get a 2.5 oz pour. Do you just get that when you pick up the bottles?

    They usually hand it to you when you walk in to get bottles.

    I just hope they don't utilize the "Florida Sue" recipe for the cans that will be coming out of Decorah in the future. No matter what they claim, that is no way that what is being brewed in FL is the same recipe they use(d) for Sue that was/is brewed in Decorah.

    Those first couple of Sue canning runs out of decorah will be quite interesting. If they are Florida quality or worse, I will be here with popcorn for the comments....

    Regardless of how good it is, people will still say "the old Sue was better".

    This guy gets it.

    I drank a lot of Florida Sue on RAGBRAI. I enjoyed myself. When it costs the same as BMC, it feels like you're winning the lottery.

    Agreed 100%. I just cant see Mike allowing them to stick the the FL recipe. Will be really sad if they do.

    Hmm, if they put the same quality of Sue into the can that use to exist, and not just under the name of DDH, I don't think you would hear that at all.
    The statement until that time will remain true. The old Sue was always better, and more affordable... Damn I miss 6.99 TG Bombers.

    Short memory? That used to be said batch to batch about 'Sue before there even was a FL-Sue!
