All Enigma Everything tastes perfect right now. I thought True Green was better right out the box, but AEE is amazing now. Spicy dank, super smooth, citric. I'm really impressed.

The Galaxy single-IPA has cooled and carmelized to a point of peak flavor. I urge all can-holders to try one TODAY.

I sent some to a friend who knows beer better than I do and he had it yesterday claiming it as one of his favorites.

Yeah, it's really something special. I'm tempted to say I enjoy it more than Space Diamonds. I think the single IPA formulation gives more room for the non-hop flavors to interact, which leads to a more sophisticated beer.

I wish they'd get back to canning more of the single hop series. The first two batches of Galaxy in cans were special, missed this one. But it remains one of my favorite OH beers.

I agree with you. I'd love to see Riwaka again sometime soon. Can anyone comment on Centennial? Is there any left at OH?

They haven't updated since their original post on Instagram from this morning, stating they still have Centennial, DDH ACE and Forever Ever

Dole pineapple juice with a nice snap of bitterness. Incredible.

Got the galaxy on these recommendations at the taproom and couldn't agree more. Definitely get that dole juice flavor. At least on tap I get a ton of white grape juice.

How is the taproom now? Still crowded? Do you think a group of 4 could sit comfortably tonight around 8

Possibly dumb question, but is there a general good timeframe to wait to crack cans? I often see people commenting here about how they waited X weeks to open a can and it tasting better than they remember. I'm sure it depends on the beer, but is it best to wait a little?

Similarly, is there a threshold for waiting too long?

I usually crack a can the day I get them due to excitement, then after that I wait 2 weeks. i also like to hold a can or 2 for about 4-6 weeks to see how they develop.

I think it depends on what taste you're iso (wheres that graph from an old Grimm thread...) but if I can help it, I sit on OH cans for 2 weeks.

Second this. You can't possibly know how something ages if you don't also try it fresh. I think the reason you see a lot about holding OH beers is that they really do age well. Not for like a year though.

This is how I would view it too. Lots of times OH is a bit green day of purchase but after a week or two great things happen!

Just curious, what about the taste tends to change from day 1 vs a few weeks later? I've only started drinking OH beers 2 months ago so I'm kinda new to this... loving every sip though. I just had the DDH ACE tonight which I bought with this release. Just as delicious as the release in July. A juice bomb among juice bombs. I'm trying to imagine how it might possibly taste better. Guess I'll hold onto some and see if slight aging makes a difference to my palate.

    In any case cheers!

So this is why I'd suggest tasting day-of, because certain beers are more or less perfect out of the gates... This week's DDH ACE is a perfect example, this does not taste remotely "green" and has a crazy depth of citrus flavor, almost like a hybrid fresh/candied/preserved lemon. Hard to imagine it getting any better, so drink now. I thought Enigma+Galaxy was like this too.

Typically, though, I've found that most of the DDH beers really benefit from a few weeks to mellow out the almost chalky/dry bitterness that can dominate at the outset. For instance, I thought that DDH Cheddar and the DDH single IPAs (AIn't Nothin Nice and Galaxy) got far better with a few weeks on them, they kept their bitterness but developed more depth and balance. There's something about the extremely light grain bill and yeast OH uses that really changes in fun ways over time, without getting that awful malty cloying-ness for quite a while.

Basically, go with your instinct and drink when you think they'll taste best!
