Back On The US-05 Train

    Have been brewing a lot of Neipas lately and other murky beers...a Wit...and IPAs with the infamous "shit ton" of hops :slight_smile:...but have just sampled my first 10 gal batch of old school IPA in almost a year using 3 sachets of US-05 (at it's expiration date no less) ...what a keeper!...it's barely carbonated and already too tasty to lay-off. :slight_smile:
    Special thanks to Simcoe, El Dorado, Amarillo, Mosaic, and Centennial...along with a 2:1 grainbill of Munich and malted Rye
    (Not that you can't brew a NEIPA with US-05, @JackHorzempa :slight_smile:)

    Can't beat the convenience. Yeast starters are just such a hassle.

    I brewed a Harvest Ale yesterday using wet hops from my hop plant in my backyard. The hops were picked as the wort was boiling and yup, I used US-05.

    Some time next week I will be brewing a Duet (Simcoe & Amarillo) IPA and I will be using US-05 for that batch as well.

    I use US-05 a lot in my brewing from APAs, IPAs, Oatmeal Stouts, etc.

    I like US 05 a lot I use it in many beers where I do not want the yeast to contribute to the flavor of the finished beer. I will often save a mason jar of slurry after a batch and find that it works as good or better second and third generation. I have not yet tried it as a fourth-generation yeast to see if it starts getting weird or if it's still good.

    How would a US05 NEIPA compare to a WY1318 NEIPA? Let's say citra/mosaic hops in each.

    @SFACRKnight brewed a split batch last year using Wyeast 1056 (Chico yeast) and Wyeast 1318. He can provide input here.

    While sensory notes can be arbitrary, I will share my experience. With all things being equal with the exception of yeast choice (meaning same hop timing, same grist, same hop lot etc) I find chico leaves little haze, no esters, and a neutral malt profile that allows the hops to shine. The aroma is straight forward, as are the flavors. 1318 leaves a permahaze, throws peach esters, and seems to muddle up the aroma and flavors for me. This is just one man's preference.

    Agree with the haze part, but US-05 can be rather peachy when fermented in the low 70s and the beer I just brewed using US-05 and a light continental Munich has anything but a neutral malt profile, imho.

    Was going to say something to this effect. The peachy esters this strain can kick out really gave a recent pale ale some juicy qualities.

    No, the Munich and Rye base malts made it malty...must be a semantics thing :slight_smile:

    I meant that the yeast had a neutral affect on the malt. :grimacing: Sorry if it came across different.

    Actually gave this exact subject some thought this weekend when I was drinking a Green Flash West Coast IPA. Might have to pick up a sachet of US05 with my grain next time around.

    US-05 is a workhorse for me during the 6 months a year I can reliably keep fermentation temps below 75F.

    I've taken US05 through well more than 7-8 generations with no worries, off flavors, or diminished efficacy.
    If you brew cleanly, you have nothing to worry about.
