    First real pour of It's Dark and Hell Is Hot 14+% Imperial Stout on bourbon, oak, and Chocolate Habanero. Intense pepper flesh flavor, oak, booze, char, chocolate, toast, pepper heat building, edges of lips numb, nice full and balanced finish. Just need some more heat...

    Are galaxy being produced in the western hemisphere now? That would be pretty rad to see some stateside acreage.

    I’m not sure. I bought these from Yakima valley. Do they only sell hops they grow on their farm??

    I agree, the 2017 Galaxy is amazing. Better than the 16' batch, for sure!

    I started drinking the pilsner kegs after 2 weeks lagering in the keg. Tasting good.

    Yakima Valley Hops sources certain hops from all over the world and repackages them, similar to YCH. On their website they have a separate "import" section and the country is listed before each hop. As written on the package, AU Galaxy indicates Australia as where it's from. Per their website Galaxy is grown exclusively in Australia at this point.

    Crossed the malt bill of a juicy bits clone w/the hop schedule from the Mad Fermentionest’s Cryo Lupulin IPA recipe. Oz each of Mosaic and Citra Lupulin suspended in a muslin bag in the keg. Lupulin puts it over the top - my best NEIPA yet.

    Added 3 Scotch Bonnet peppers to It's Dark and Hell Is Hot Bourbon Chile Imperial Stout yesterday, perfect heat level tonight... Wife says it's like drinking hot sauce... paired with Milk Stout Molé chicken enchiladas and Mexican Lager refried beans.

    Enjoying a pogo IPA at my new hockey themed bar. Pairing a solid beer with a shitty Sabres hockey team!

    Beer is about 7%. Based on Russian river blind pig. Crystal clear, bone dry, with some nice bitterness. I used some free 2 row for this batch that may be a bit stale and the us05 seems to have kicked off some Belgian type esters on me (my fermentation temps were in the lower to mid 60s but I've had some weird experiences with that yeast lately).

    Pellets, from Yakima Valley? Was yours a bit of a sticky mess? Mine was. The bag was still vacuum sealed when I got it, but the "pellets" inside were mostly one giant lump of powder that was very difficult to break up, and stuck to anything it touched. Like maybe some moisture got into it or something.

    That's where I got mine as well, and yes, they seemed more "sticky" than usual (perhaps lots-o-oils!). Either way, amazing quality this year… Very bright, potent flavor and aroma out of this crop.

    Yea from YCH. I had a lot of dust and not many whole pellets. I didn’t notice it being any more difficult to work with though. I use mason jars to weigh hops and put into fermenter/kettle. The hops didn’t stick to mason jar

    Totto's twin, aptly named for my dog who looks pretty identical. Chocolate vanilla coconut brown porter. Very nice base beer accentuated by the spice additions. Aroma is slightly sweet coconut with a hint of vanilla and chocolate with slight roast. Drinks very smooth with a touch of sweetness but finishes dry enough to make you want another sip immediately . Better and better as it warms. 4.7%
