    I'll also choose helles over pils 99% of the time. I love both styles but every once in a while I crave that crisp hop bite from a pils that you just don't get in a helles.

    I'm fortunate to have some great German-style pils made near me in NY & PA, but my favorite ones are either draught only or can be tricky to find in stores, so I'll be purchasing plenty of the Ayinger. I'd love to find it on tap somewhere to compare it to the bottle.

    I have had Ayinger Pils several times but solely on draft; most recently last week at a bar in Philly. I have enjoyed drinking those beers.

    I am personally disappointed that the Ayinger bottles imported to the US have no dates on them. No way of knowing how old they are.

    Personally I find it very uuurrrrggghhhh. In a cheap pish kind of way. Odd I know given the fact that it receives plaudits but possibly it’s my mental make up of having the barriers up each time I try to like it that is holding me back? That or my palate is not acceptable to it?

    Did you get old beer, or maybe it was handled poorly by distributor or retailer? I only ask because I think it's a fantastic beer, always a little on the sweet-ish side but balanced well with hops.

    I’ve occasionally seen Rothaus in pubs in England, but l’ve never had one because I think it probably wouldn’t be in great condition.

    As with most beers, it’s best fresh and close to the source.

    I've seen Salvator (as well as a lot of other well known bavarian beeers) in Supermarkets and Getränkemärkte in northern and western germany for at least 15 years. And that's just when I started paying attention to it.

    It's gotten worse over the years, that's for sure.
    Anyway, I always found the distinction between Bock and Doppelbock a bit forced, given the very nature of rural bavarian beer culture:wink:

    For what this is worth, my last beer for January 2018 (I'm participating in Dry January again) was the last Salvator from my Paulaner "Taste of Munich" mixed pack -- I'd forgotten how hazy the first 2 were until I poured this one. It's damn near as cloudy as the Weizen. Don't get it, still has a malty, Doppelbock character -- if not color, but it might as well be a Kellerbier.

    Anyone else seeing cloudy Salvator?

    A friend of mine gave me four 1/2L bottles of Salvator last year. It was probably as good as it has ever been to me. Granted, I've only had it going back 13'ish years, though. The crew that runs the Falling Rock in Denver swears the beer has been on the decline since the late 90's.
    Either way, it has never been my favorite doppelbock. Yet that one last year had more depth and more going on than in previous years. Normally it's a pretty straight-ahead sweet/bready item. This one had some of the cocoa and molasses notes I like in Optimator and Korbinian. It was dark in color, still still definitely bright.

    The 11.2 ouncers in the mixed pack were more the former than latter of your descriptions. Still tasty beers, but not my favorite Doppel either.

    FWIW, I checked my Salvator review from 2008 and it sounds very much like the beers I had from the new mixed pack. Like the Falling Rock team, I have old memories of Salvator being different back in the mid-80s when I first tried it, but I could be jumbling it in with all of the other Doppels. One thing I know, it's always been clear!

    Hi y'all. Long time no see.
    I spent a few hours this morning re-reading the first 10 - 12 pages of this thread, my reviews mostly, and felt really nostalgic for those times in general and on BA, as well.

    And... all the posts that Stahlsturm contributed... I almost cried reading them and thinking of his present situation. The post I remembered most, for there were many that bore his mighty personal imprint, that saddened me most was this:
    It's on page 11 of this thread near the middle if you want to revisit it in the context of the conversation. I suggest you too should reread the first 12 pages to remember him and the unique perspective and voice he brought to this place.

    Anyway, this got me to thinking that since then I've had so many great beers: German Craft, German traditional, English, Belgian, and a few American Craft. I haven't reviewed any of them except in my head while washing them down my gullet, yet reading the old posts from 2012/13 made me want to go back and redrink those exact beers. Thus... I'll try to begin reviewing beers. I may even post some of the pics I took of beers I remember enjoying, and go back and redrink them for review, especially if they were craft or reasonably accessible. In addition, though I'm skipping BrauKunstLive in München again as I did the last 3 years, Frankfurt will have it's 4th Craft Bier Fest in March, to which I'm going again, and this time I might take notes. Cheers y'all.

    I just had a quick browse at some of the earlier pages of this thread and it was a really interesting, informative read.

    It’s always good to look back at old stuff and compare what was going on then to what’s happening now.

    First beer is a long time is from my still favorite brewer in Germany, Pax Bräu (http://pax-braeu.de/ I'd make a link, but the "link" button doesn't seem to want to give me a pop-up window, eh?). Andreas Seufert still makes the absolute best beers, some of the most innovative and best quality beers in Germany.

    The beer is from his Bier Kalendar, a subscription to which I get sent by mail 2 bottles of the monthly special beer. [​IMG]

    January's beer is Mango Chili, with the ingredients Mango, habanero Chili, wheat and normal malt. Unfortunately, he doesn't put the regular ingredients individually, like which hops and malts were used, any more.

    Aroma: Potent chili wafts up, some sweeter stuff like citrus and mango, basically a huge dose of Casade hops
    Flavor: In the front, I get peppers, ever so slightly burning, sweet München malt candy-like sweetness and bitterness. This is habanero, not black pepper, I feel and taste. Yummy.
    In the middle, it's more of the same but less peppery but more a burnt roasted pepper flavor mixed with a round flavor of the sweetness of a Märzen, yet more roasted.
    In the back you get full on biting spiciness of the habanero with more round sweetness. I got a feeling he's added some smoked malt to give this round, full, flavor. The full drink gives way to more caramel some slight mango, but tasting more like the mango was roasted or baked until it caramelized, not at all a full on mango Lassi like flavor. Basically, if you love spicy foods, you'll say WOW WOW. The sweetness of the Münchner malt and mango is there but not overly caramel. I'm guessing he may have taken his base recipe, which is something like 40% Münchner, 5-7% Rauch (smoked) and the rest Pilsner malts, added habaneros and mangos to the boil and viola, a super wonderful beer. The chilis burn ever-so-slightly (yeah!) and predominate, but don't overpower. The underlying malts still shine through and mix perfectly. However, had I brewed this, added some pale malts instead of maybe pilsner to add some toasty sweetness. Yet.... a very strong chili beer but in no way overdone.
    Mouthfeel: Goldilocks range, but often his ales tend to lean towards the thin side, and as Jack H. may or may not still remember, I prefer a thicker mouthfeel. Nevertheless, that's basically the only minus in my book.
    Aftertaste: lots of chili, a slight burn, sweet caramel.
    Overall: lots to love about this beer, but I hate to say that due to the punch and aftertaste of chilis, not one to drink too often. Also, did I mention it's 9.9%! One can't taste the high alcohol at all, it's so well hidden and balanced, but after a full 0.3 L... my head feels it.

    ps... for Christmas I gave gave myself a 16 pack of his Vollbier

    Tony, it shouldn't matter which photo hosting site you use but: I use imgur and once the photo is loaded on that site I simply copy and paste into the BA post.
    Yup, I do indeed remember and for most beer styles I too prefer a thicker mouthfeel. I recently brewed a batch of Robust Porter and I made a number of design choices to make that beer chewy.

    I live in Pomerania.
    Salvator is a bit lighter for a Doppelbock.

    I rarely pick it up cause i have better options available like Andechs,Celebrator,Stralsunder Traditionsbock.

    A friend of mine (and fellow Schlenkerla lover) just sent this photo to me. This is the first time I've ever seen Schlenkerla in cans. He said they ship tankers to the US, can it in Connecticut, then distribute it. He purchased it at a shop in Northampton, MA and they only had the Helles available. Maybe best of all is that the 4-pack had a sticker with the date it was canned on. Anyone have any additional info on this? I would be over the moon if I found 4-pack cans of any Schlenkerla biers!

    Hold on a second, since when is Schlenkerla Helles unfiltered?But hey, I would kill for any classic franconian brew in a can. But you never,ever see this in franconia. Don''t really know why though because,weirdly enough, those 5l metal keg-can-thingies are really common and kind of popular there..
