What would your dream beer be?

    In my limited home brewing experience, I've only managed to produce one beer that I liked enough that I wished I'd made a bigger batch and wanted to brew again. It was a barleywine brewed with rye malt and maple syrup in the 9.5% ABV range. In the middle ground between American- and English-style in terms of hopping. Would love to see what a pro could produce along those lines – a brewery like FW, Hill Farmstead or Fremont.

    Alternatively (and even more pie-in-the-sky), a bottled version of Fuller's ESB that was exactly the same as it is fresh on cask. I've never had the latter, but from all I've read here it's sublime compared to the bottled version's mere excellence.

    A pineapple IPA that is heavy on the pineapple. Probably with mosaic and citra hops.

    Not to pile on but I did this in 1990 as a 20-year old and it was awful tasty and quite a party. It was sheer coincidence timing-wise and to top it off, my friends and I went from Munich to Berlin to be there on THE day of Reunification and stood at the Brandenburg Gate. Ahh, the memories..thanks for reminding me!

    One that is pulled from a hand pump in a tiny old pub in the countryside of Scotland/Ireland with some old man with a thick accept telling me stories about his sheep herding lifestyle.

    For my wife: a simple cucumber basil wheat or fresh veggie goses/sours much like Benchtop does.
    For me: a chocolate IPA - "Mud in Your IPA"

    Not what you want but a great Sage beer, cellar door from Stillwater. A rosemary Saison would be really nice. I need to look into that.

    With Rosemary being so flavorful and odoriferous I wonder if I chopped up fresh off the plant rosemary and dumped it into a saison how that would work.

    For reference, garam masal consists of peppercorn, cloves, cinnamon, nutmeg, cardamom, bay leaf, cumin and coriander. Perfect recipe to ruin any beer it gets near.

    I believe that is now called "innovation" within a portion of the brewing industry.

    As illustrated by numerous posts in this thread, one person's "dream beer" is another's nightmare.

    Collaboration 12oz x 12pk themed like Baller Stout/Murda'd Out Stout
    6 of the beers being Dark Lord blended 1:1 with 6 brewery's biggest stouts: [Mikkeller, Evil Twin, FW, Bruery, Cigar City, Perennial]
    And then then other 6 would be BA'd version of those 6 blends.

    I'm not a huge DL guy but I'm giving them the nod for this pipe dream since I did have Baller one time and thought it was a cool concept.
