You might want to add that according to Oliver and other sources it's the carbonation that cuts through the fat.

Turns out that's a good thing since if you cut through/remove the fat, say in cheese, and then take another bite you get to re-experience the goodness of the cheese and its fats.

Absolutely give you that. Cheese and beer is a different ballgame for sure.

Wow, this thread certainly moved quickly. Finally read through the whole thing and didn't see this:

If you're going to go through the time, trouble, and expense to age a beer in a bourbon barrel, don't add any other flavors to it.

Coffee clashes. And if you're adding vanilla, or any other flavor that is generally inherent to bourbon, that probably means that the barrel aging process might not have been worth the effort to begin with.

Big Beer is mass produced crap. It do not find merit in it's consistency, drinkability, or lack or flaws. I know it is popular and what most people in the world prefer, but I just cannot stand it. I will gladly take a real, lovingly made flawed craft beer over a pristine macro lager any day.

For me it works with pizza, fried chicken and barbecue as well. I suspect that carbonation is good for cutting through all the fats not just the cheese fats.

    'Session' is not a verb.

There are good and bad ones, but typically I don’t feel that they’re terribly overrated. However, this is coming from a local New England perspective. I will say that there are certain regions of the country where the stouts are hyped by locals more than they deserve.

I love it when breweries experiment with weird ingredients and flavors. There’s thousands of beers in any style that are “good” or better for what they are, but after a while, they can start to blend together. Very rarely do brewers go outside their comfort zone and do anything to stand out.

An IPA with vanilla, marshmallows, and candied sugars? Why the fuck not?
A Gose with squid ink? Deliciously odd.
This beer has Mace in it? Sign me up!

What would you say is the intrinsic quality of beer that makes it attractive to white men in particular?

For me it's a well done Oktoberfest that I like best with Pizza, but as you say the others work well too.

I hate all the whiners and the stupid reason they spout as to why they can't get a certain beer. It's beer. Get over it. 99.99999999% are going to be so similar to other beers you won't even know.

I like brown ale,Pilsner and lager as well as the popular IPA and stout categories.

    Enjoy

    Truth!

And, using 'session' as a verb marks one as an imbecile.
