    I said beers not styles... confusing the two is exactly what you're blaming someone else for doing in your next post. :slight_smile: I only used your post in conjunction with pbrian's to illustrate how things can get distorted.

    Comparing VDKs to esters is not going to win you this argument.

    Why are you obsessed with "winning" the argument in a thread about opinions?

    My point that diacetyl and esters are both acceptable in certain styles and not acceptable in others is completely valid. Have you studied the BJCP style guidelines?

    I'm not obsessed with anything. I simply realize that I'm writing these things to complete strangers on a message board that's dedicated to beer. Think that over a bit.

    VDKs are far less acceptable than are esters and there are far less styles where they are acceptable. And even then, they are acceptable, but it is fine if they are not there. Esters are necessary in may styles of beer. Without them, those beers would not be stylistically accurate. There is not even one beer that wouldn't be stylistically accurate if no diacetyl was detected. Not a single one.

    On that note, my controversial post of the day is that the Saison Dupont that I had yesterday (one of my favorite beers) had a bad level of diacetyl (as far as I could tell).

    Butter or butterscotch or just stale/sherry? I could understand the trans-2-nonenal stale beer character, but the butter character of diacetyl I've never experienced.

    Butter not oxidation. I'm assuming you mean "in Saison Dupont" with your last statement and if so, I'd say the same. I have enough faith in myself picking this up that I'll post about it... but I naturally have little faith in myself by default, so of course I could be misinterpreting this. I'd hate to say something like this if erroneous, but I thought I'd see if anybody else ever experienced this with this beer. Bottle was from 2017 according to the cryptic code, but I didn't decipher it enough to determine the month.

    Anything even remotely resembling butter is not good. VDKs or butyric acid are the only things that come to mind (though some think isovaleric acid resembles butter), and I don't want either of them in my beer. Well, at least to the extent that I can taste or smell them, that is.

    Did the beer gush (any more than usual)?

    Personally, I'm not a fan of diacetyl in my beer. I won't even ordinarily buy Pilsner Urquell, although my experiences with the diacetyl level in that beer varies (be it due to actual variance or my sensitivity to it shifting... I think it's a combo). The Dupont didn't gush at all but you're of course wise to add "more than usual" because it had a head from the pour that went far beyond an average beer... but not unexpected for this one.

    Thought you had an expandable palate? What comes to mind are Brewery Vivant Paris barrel aged sour and Bells Sauterness Lychee Ginger Mercury that is labeled a Belgian pale ale on BA although not sure I'd call it that.
    Both of these beers have a buttery oak flavor that is delicious and part of what makes me seek them out again and again. Now this might not count as it's not a saison although Sauterness Lychee could be considered a saison, probably moreso a saison than a Belgian pale ale.

    Point of the matter is that a buttery flavor can add to a very tasty brew if brewed correctly.

    I'd argue against this until my dying breath. Butter, to me, is ALWAYS a fault.

    I'm OK that some people don't like me. It's the internet, man, everyone's at least a little more douche-y than they are in real life. Maybe we can just have a Nugget Nectar and hug this shit out?

    Have you had Vivant Paris? Or Bells Sauterness Lychee Ginger Mercury? If not I suggest trying them if you ever come across it. Might change your mind.
