What would your dream beer be?

    I have to get Southern Tier Nu Skool IPA again because that was as close as I've tasted to my idea of a perfect beer, overall. If I had to choose one beer for the rest of my life, I imagine an IPA in the 6%-7% range with pilsner malt or pale 2-row and perhaps a touch of flaked wheat or oats. Then a hop combination like Citra, Mosaic, and Simcoe. My ideal IPA is neither fully West Coast nor New England, but somewhere in the middle--or the best of both worlds, if you like. I want an IPA that's crisp, clean, light, (but not watery) fruity, resinous, dry, and lightly bitter all in one package. The closest I've been able to find to that mark is Southern Tier Nu Skool IPA. Ommegang Nirvana IPA comes pretty close to fitting that bill, too.

    An IPA that is brewed with an exotic hop that was pollinated by an extinct species of butterfly under the blood moon. Harvested at dawn, and used to dry hop before the morning dew could evaporate.

    There will be a big release announcement, but only one four-pack will be produced (due to the extinct butterfly). I will be the first in line, and will chug my beer in front of all the hazebros sitting in line behind me.

    We will harvest their tears (which contain a surprising amount of lupulin) and use them to brew our next release.

    You won't find much "pulled from a hand pump" in Ireland; it's a novelty as in North America.

    Sorry to bring an old thread back - however - I listened to a podcast today with Jeff Stuffings (Jester King) being interviewed. He mentioned Founders as being a brewery that influenced his discovery of craft.

    Got me thinking - a Jester King/Founders collab beer. It could be a Strawberry farmhouse ale briefly aged in Founder's maple syrup barrels. It'd be called Texas Brunch Ale.

    I'd buy a case, just to say I have it.

    Pilsner malt, some wheat and/or spelt ...70/30
    Lemondrop throughout boil
    Citra and galaxy towards the end
    A form of English yeast

    Empire brewing Aphrodite i think is saison with lavender. Either that or some wheat beer with lavender. I think its in nitro bottles

    I'm just starting to get into some bottles of a sour I brewed with chamomile and lavender (and racked onto some second use fruit). It has a really interesting flavor that isn't in your face soapy-ness but it's almost like orange soda (but in a good way). Some time in the future I'd like to try using lavender again and uping the amount, I went pretty light with it on that beer.

    How about a 6.5%ish IPA hopped with Galaxy and Simcoe and conditioned on passion fruit. I'd buy a case of that if someone like Tired Hands or Trillium brewed it.

    I try and do that as often as possible. I have had some success the last few years.

    Edit - except for the expenses paid. We travel on the cheap in country.

    Have you played with any of the cryohops? The trick might be in finding Cryo Bullion or Brewers Gold.

    Actually, I've just begun experimenting with some cryohops (though not the elusive Brewers Gold).

    On the German side of things, I have always felt a dark weizenbock from Andechs would have to be really good.

    From Belgium, I'd be interested in seeing what lambic producers could do with more non-native fruits. Things like blackberries, acai, or persimmons. Both back-sweetened and dry versions.

    Over here, I've often thought that an adjunct lager made with "new school" hops like citra, lemondrop, and amarillo could be delicious. No crazy late dry hopping or anything like that - just normal addition hops that have a citrus overtone.
