    House Wit is an experiment in barrel fermentation with non-wild beers. We took a simplistic Witbier grain bill and tossed in a bunch of aged whole leaf hops. Instead of fermenting in a stainless steel fermenter, we pumped the wort directly into freshly dumped French oak red wine barrels and pitched our favorite Witbier yeast strain. Clocking in at 4%, this unspiced clean Witbier exudes vinous character both in the aromatics and on the pallet. Beautiful notes of clove, bubble gum, cheesy/funky/earthy hop character, and a refreshingly moderate carbonation level. We love non-wild barrel fermented beers and look forward to experimenting more with these.
    Shooting for approx 30-40x cases. $12+tax/4-pack. 1x case/6x 4-packs per person limit.

    We have a decent amount of cans left of NF3, Master Shredder, and Dry-hopped Coalesce.

    Couple of thoughts on this beer.

    First, I'm wondering if this is the "Veil House Beer" I've seen on tap list at several NRG spots in DC? My fiance ordered it twice and it tasted different both times. First time it had more barrel notes. Second time it was much more traditional wit.

    Second, I'm wondering if this is an attempt to make "Suarez" -esque beers. I've had a decent amount of them. Love them all and I would support Veil going more in this direction.

    Tomorrow, Saturday March 17th(St. Paddy’s Day) will be the small batch debut of Never Lucky!

    Never Lucky is our latest iteration of our Never fruited Gose series. Clocking in at 4.9%, we bombed this one out with a whole bunch of Kiwi purée! This was a small batch for us, so there are less than 35x cases available. $17+tax/4-pack. 1x 4-pack per person limit. There will be limited draft available also of Never Lucky.

    I'm interested to try that, I don't really understand how a barrel-fermented non-wild beer works. I would think barrel fermentation is almost the definition of wild, unless they sterilized the barrel and somehow
    I can report that this beer is not Suarez-like at all. It has a very unpleasant smell, although the taste is not bad.

    IdontwanttoBU3(cubed) is the TRIPLE dry-hopped version of our 0 IBU IPA IdontwanttoBU. Clocking in at 6.9% and hopped intensely with Citra and Mosaic. This one is incredibly aromatic.
    Shooting for 175-195 cases. $16.50+tax/4-pack. 2x cases/12x 4-packs per person.

    Weekend at Broznies is our 9% all Citra DIPA Broz Night Out with a bunch pineapple purée added to it. We decided to put twice as much pineapple than the last batch of Broznies. If you love Broz Night Out, Citra hops, or previous batches of Weekend at Broznies, you will love this one.
    Shooting for approx 190-205x cases. $18+tax/4-pack. 2x cases/12x 4-packs per person.

    Stout Shuns Cliques is a one-off small batch designed and brewed by Sam Calagione and Brewmaster Mark Safarik of Dogfish Head. During their recent visit here at The Veil, we brought up the idea of Sam and Mark designing and brewing a small batch on our 7bbl pilot system. They were stoked to give it a whirl. Together, Sam and Mark came up with an easy drinking stout with mainly English malts and our house yeast. They then added some dried rose buds they brought with them and some French pink peppercorns that we had in house. Both of these elements added a beautiful, subtle complexity to this easy drinking stout. Clocking in at 6.2%, Stout Shuns Cliques is a super crushable stout with notes of dark chocolate, subtle grapefruit peel, powdery cocoa powder, raisins, dark cherry skin, and very subtle rose/floral aromatics.
    Shooting for approx 40-50x cases. $13+tax/4-pack. 3x 4-packs per person.

    Never Never Backdown Backdown is the double fruited version of our apricot Gose Never Backdown. Clocking in at 5.1%, Never Never Backdown Backdown is conditioned on over two tons(literally) of apricot purée. Insanley bright, fuzzy apricots in your nose and mouth hole that keeps going and going.
    Shooting for 180-200x cases. $21+tax/4-pack. 2x cases/12x 4-packs per person.

    Dreamz + Realizationz is a very special beer to us. Brewed in collaboration with Sam Calagione and Brewmaster Mark Safarik of Dogfish Head. Together we dreamt up an 8% DIPA with peppercorns. We brewed two different versions/batches of this beer. The first batch was turbid mashed, sent to our koelschip for natural cooling and inoculation of wild micro-flora overnight, then transferred into freshly dumped red wine French oak barrels to spontaneously ferment/condition for 1-2 years. That batch will be called Realizations and Dreams. Dreamz + Realizationz is the fresh, stainless steel fermented version. We started with a grist bill that consisted of both English and American grown grains. We added two of our favorite American hops Citra and Mosaic to the whirlpool along with 3x different types of peppercorns. 2x of the peppercorns were sourced by Dogfish Head from their friends at Burlap and Barrel. The first selection was from Nepal and was incredibly citrus forward. When we opened the bag, it was like smelling fresh grapefruits. The second selection was from Madagascar and contributed a beautifully subtle, yet elegant clove character. The third peppercorn was an organic Sichuan green peppercorn sourced by us at The Veil that contributed a bright lemon/lime peel character. Blended together, the 3x peppercorns smelled phenomenal! We then fermented the wort with our house English ale strain and dry-hopped it with two of our favorite Southern Hemisphere hops Nelson(from New Zeland) and Enigma(from Australia). Ingredients from 7 different countries together in perfect harmony. Subtle peppercorn characteristics in an incredible medley of intensely aromatic, flavorful, juicy hops.This is very representative of our hoppy portfolio in conjunction with the boundary-pushing, innovative brewing of our friends and one of our biggest inspirations, Sam, Mark, and all the talented folks at Dogfish Head. We are beyond thrilled to share Dreamz + Realizationz.

    I picked up a few cans of the Dreamz and IBU3, and damn they're both pretty good. The IBU3 is especially nice, its completely lacking that earthy Veil taste and is bright and zippy instead with a distinct orange sherbet aroma. It makes me wonder where that typical Veil taste actually comes from, I assumed it was the house yeast but now idk, unless the IBU series is brewed with a different yeast. After drinking this and to an extent Dirt Dirt Nap Nap, it makes me wonder why they consider White Ferarri to be their best IPA. Those two are ten times better than WF.

    As I think about it more, I wonder if their typical IPAs are intentionally underattenuated and the taste comes from residual sugars. Without any bittering hops in the IBU series, they may fully attenuate to keep sweetness levels down.

    I was kind of underwhelmed after having my first White Ferrari recently. A lot of people have said this batch wasnt great but compared to previous batches of Dirt Nap, Potato Napkin and my all time favorite veil Fire Emoji it was good but not the best.

    Yeah to me, White Ferarri just doubles bown on the earthiness and is pretty sweet, bot of which make it hard for me to drink. I'm going back today to grab some more IBU3.

    They don't post that anymore so I don't know, but if you get there around opening you should be fine. There won't be a big line or anything, maybe 4-5 people but I seriously doubt there will be enough people to clean them out. Post-Tuesday people usually just buy a couple 4-pks.

    Passion Berry Tastee - Tastees are kettle sour ales clocking in at 5.5%. We add a bunch of lactose to these and brew them intentionally to be fuller bodied to try and replicate a fruit smoothie. We then select two different fruits and bomb it out in secondary fermentation at just shy of double fruited goses levels of fruit. For the next fruit blend in this series, we decided to use Passionfruit and Raspberry. Incredible tropical and berry notes. Perfect level of acidity with the balanced sweetness and smoothie-like body. **PLEASE NOTE THAT THERE IS A SIGNIFICANT AMOUNT OF FRUIT IN THIS BEER AND THAT IT IS IMPERATIVE THAT THESE CANS REMAIN COLD AT ALL TIMES.**

    Chubbles is our collaboration with our mates from the UK Cloudwater Brew Co originally brewed with Paul last year during his first visit at The Veil. We have received an overwhelming interest in bringing this beast back, so with Cloudwater’s permission, Matt whipped up another batch. Chubbles is a proper 10.9% Triple IPA with 100% English malt, a ton of flaked oats, fermented with a specific English yeast, and hopped intensely with Galaxy, Citra, and El Dorado. Huge mouthfeel with a touch of sweetness. Mimics the mouthfeel/sweetness of actual orange juice(without the acidity). Proper mental aroma on this one too. We are thrilled to bring this one back for y’all!

    There is a *slight* possibility that we will have a small amount of Never Never Backdown Backdown(double apricot Gose) cans left from last Tuesday’s release. Any NNBdBd cans left over will be available for purchase at NO LIMIT

    Feel Feelings - We decided to bump a scheduled Wednesday canning of this one to today for tomorrow’s release because it’s tasting so dang good! Feel Feelings is our lead brewer Justin(aka Cat Boy)’s first recipe here at The Veil. Clocking at 5.4%, this unfiltered Helles lager is incredibly clean, crisp, and refreshing. This batch turned out awesome.
    Approx 160x cases will be available tomorrow. $12.50+tax/4-pack. NO LIMIT

    Special Combo #2 (DEBUT) The Special Combo DIPA series is an exploration of variables in the brew process for us. This series will allow us to experiment with different hop blends, different malt profiles, different yeasts, different water treatments, etc. We will refrain from releasing too much information about each Combo in an effort to reduce subconscious persuasion and allow you to truly enjoy each deliciously joosey treat. This one clocks in at 8% and contains a hop combo we have never used before and fermented with a yeast strain that is not our standard house strain. We hope you enjoy the Chef’s specialty as much we do!

    whitebugatti is the Triple version of our Galaxy/Citra DIPA whiteferrari. Clocking in at 11% this one is just freaking mind blowing. If you like whiteferrari, you will go insane for this 11% soft bomb.
