Awesome, just cloned hopslam!

    Just as the title says, it's not carbonated yet (bottled Sunday), but just tested a bottle as I'm impacient and tasted just like it minus the carb. Now I can have hopslam all year round.

    Seriously, I've never had it and probably never will unless I clone it, so if you feel like sharing I think we are all waiting for it. Good job.

    1 chinook 60 min
    1 citra 60 min
    1 galaxy 45 min
    1 centennial 30 min
    1 citra 15 min
    1 centennial 10 min
    2 citra 0 min
    2 simcoe 0 min
    Dry hopped with 1oz citra and 1 oz galaxy. 10 days

    FG was high probably to my inexperience with partial mashes, but still tastes awesome. I pretty much found the recipe and just replaced with the hops I had in the fridge.

    Hopefully it doesn't fall off as quick. I've had pretty good hop retention in my IPA's

    Yeah, FG is a little high. I would've added more (quantity) of characterful grains vs. the large majority of DME, as well as more honey, 90 minute boil, and a big nasty yeast starter... but that's just me. Dryhop amount would also be more like 5 oz. too.

    When/how did you incorporate the honey? Was it orange blossom?

    Just to clarfy, by 1 in the malts you mean 1#, and by 1 in hops you mean 1oz, correct?

    Also, 1 honey is 1# honey, or 1# honey malt?

    Sorry just copied notes. It's lb for the fermentable's and oz for the hops. 1 honey refers to honey malt. I was thinking of using more, but after tasting I realize it doesn't need it, I got plenty of honey taste out of it. I've only been brewing for a year now and well aware of some of my flaws when it comes to mashing and yeast pitching (just threw 2 dry packs in there), but I'm am always blown away by the outcome. Feel free to clean it up as you see fit.

    So you found a recipe for Hop Slam and changed up the hops, or you found a recipe for a IIPA and switched up the hops to what you had and ended up cloning Hop Slam w/o trying?

    I did the first, the recipe I took it from did the latter. He said he brewed a IIPA with honey malt and it tasted just like Hopslam. Though if you going to do an IPA with honey how can you not think hopslam. I just took his recipe and switched something out with citra, galaxy and chinook as I had that lying around.

    1 lb of sucrose, I do it with all my IPA's. It helps dry it out since its 100% fermentable and just adds to the abv%

    You add the hops at the end of the boil, and they impart flavor/aroma while the wort is cooling.
    The '0' just means 0 minutes from the end of the boil.

    You should harvest yeast from one of the lower ABV Bells beers to truely clone it. 001 will get you close, but the Bells yeast has given me closer 2 Hearted clones, so it should for Hopslam too.

    Adding sucrose to the boil might be impacting your FG. Instead, try waiting a few days into primary fermentation to add it to your fermenting bucket/carboy.

    Also, 1 lb. of honey malt is quite a bit. I've been experimenting with it in my brews and have found that a little goes a long way. My last batch was a honey DIPA that had 2.5 lbs orange blossom honey and .2 lbs of honey malt. The honey malt made up roughly 1% of the grain bill, and for me that seems to be the sweet spot. YMMV.

    A hop addition @0" followed immediately by chiller-ing will produce a different aroma profile than a hop addition @0" followed by a 10" steep before chilling.

    Allow me to suggest the latter for more better aroma.

    And let this be a reminder to everyone that "0 min" additions are highly variable, depending on your system. For instance, if it takes you 30 min to cool to pitching temperature, your "0 min" addition will have a different aroma/flavor contribution than someone who takes 60 min to cool.

    And I'm not even getting into IBUs. Reportedly, Heretic Brewing picks up 60ish IBUs just from their "0 min" addition for Evil Twin.
