    on the electric lease for next week, so couple of clean up ipas and a couple of bvery young belgian blueberry/peach.

    In between houses right now... staying at my mom’s with my wife and 2 kids, with half of our shit in her living room. Stressful times, but I’m drinking a simple saison, fermented with white grape must. Dry hopped with hallertau blanc.

    The YB saison blend I is on its 5th generation and really starts getting good after a few months of bottle conditioning. Moving sucks, but this beer doesn’t!

    What wine? I'm looking to so a saison with Nelson sauvin and sauvignon blanc must if I can find a 1 gallon kit.
    But if I can't find a SB kit any fruit forward white should work.

    Nothing crazy, but the grape flavors came through pretty well after carbonation. I added it at two stages during high krausen

    Neipa with WLP-300. Was hoping to mix banana esters with the hops but it came out like grapefruit.

    Post boil pitch. I give the Lacto 24-48 hours head start over the yeast when I do that. It's arguably risky with Sacch (since the low pH could interfere with a good healthy fermentation) but Brett can handle the low acidity (and actually, in my experience, so can Sacch). I generally pitch the Lacto in the 90s and then let it free fall to room temperature, at which point I pitch the yeast.

    [​IMG] 30 minute mash and boil neipa with citra eldorado and so4. Grist was typical. Very satisfied for only taking 3 hours.

    Not the best lighting but this is my NE-ish IPA that I’m calling Still Bitter. 80% 2 row, 10% rye, 10% oats. Bittered to 50 ibu with Simcoe, and then lots of late Azacca and Mosaic additions. Soft, creamy, fruity palate. Finishes dry, green, and lightly bitter, with a little peppery kick from the rye. Pretty good!

    This is my gluten free attempt at this:

    The yeast blend really rounds things out and adds a little perceived sweetness to the brew. I'm a fan and will be experimenting quite a bit with this going forward. Head retention and lacing are much better now that I've cut oats out of the grist. Flavor is very nice. I can see the Julius flavor in there, but this hopping schedule is not as hop saturated and as aromatic as I would like. My best gf hoppy brew to date!

    Thanks, I’m gonna cellar the remaining. Good fresh but could improve with some age.

    Edit: sorry by cellar I mean till December. This beer was bottled 11 days ago.
