    'Couldn't help but to notice that gorgeous bar top! It's either Spalted Maple or a spalted Ambrosia Maple, either way, absolutely stunning wood!!

    Moderate pour yields a one inch white head over a hazy golden body with some nice thick lacing. Nose of pine resin foremost with some tropical fruit and citrus. Taste mirrors nose with a finish of pine and a bit of citrus pith. There is a bit of sweet citrus flavor as well. Real nice mouthfeel and overall, a great swing at an IPA from Cooperstown.     Just not a fan of Ten FIDY. I'm glad it's not over-hopped like Expedition Stout, Old Rasputin and several others, but it has a very odd flavor profile. However, BBA Ten FIDY is outstanding.

    It was my favorite. I bought up all I could find when I heard that it wasn't coming out in '17. Running short with only a couple of each year from 14-16 left.

    Stillwater - Critical Thinking Imp. Stout. Overall very nice - good balance of chocolate and roasty flavor, thick and full bodied, and can't taste the 11% abv

    By the time I found out, it was all long gone around here. Did have a 2013, 2014 or 2015 (can't exactly remember) on draft several months ago, and it was outstanding.

    I'm with him...IMHO FIS > Bell's Exp. > Ten Fidy.

    However, I'll always rep for Ol' Raspy. For me, FIS, Old Rasputin, Narwhal, and Brooklyn BCS share the room at the top.

    I have to let Ten FIDY age at least 2 years before I drink it. For that reason I buy it about every 2 years. I believe the cans I have now say, "10w40 Engine Oil" on the bottom. What is that, 2015? 2016? I can't remember!

    Awesome Stillwater sour! Aromas and flavors of big tart/sour lemon, lime, orange, grapefruit, peach, pear, pineapple, apricot, red/green apple, white wine, passion fruit, papaya, mango, guava, berries, cedar, citrus peel/zest, peppercorn, hay, straw, and grass; with moderate wheat, cracker, white bready malts; light leathery/musty funk, and yeast earthiness. Light-moderate lactic tart/sourness, yeast/cedar spiciness, and light Brett tang on the finish. Medium carbonation/body, and fairly crisp finishing. Balanced creamy/bready/grainy malts and lactic acid in the mouthfeel; light tangy Brett and cedar tannins. Light-moderate increasing acidic/tangy dryness, no puckering. Very flavorful and pretty refreshing, 5%. Not overly lactic. Awesome balance of citrus/tropical hops, and Brett/Bacteria complexity; with a nice cedar presence, and pale/wheat malt backbone against acidity. They have been nailing the sours all the time lately.

    New Prairie sour. Fantastic! Aromas and flavors of big sour/tart/tangy pink guava, passion fruit, fruit skin, lemon, lime, orange, grapefruit, peach, pear, pineapple, mango, melon, green apple, white wine, gooseberry, hay, straw, and grass; with moderate wheat, white bread dough, light honeyed malts; light notes of pepper, lacto/leathery/musty funk, and yeast earthiness. Light-moderate fruity/lactic tart/sourness; light fruit tang, herbal/grassy bitterness, and yeast spiciness on the finish. Medium-plus carbonation, medium body, and fairly crisp finishing. Creamy/bready/grainy wheat, some lactic acid, and light fruit tang/tannins in the mouthfeel. Light-moderate increasing acidic/tangy dryness. No pucker. Very smooth and pretty refreshing, 6.3%. Not overly lactic. Outstanding balance of pink guava and Brett/Lacto complexity; great pale/wheat malt backbone against acidity, mild lingering sweetness. Worth getting a 2nd pack.

    I don't have any Expedition, but I still have a Black Note from 2015 cellaring away, letting all those flavors meld together.

    I'm always a proponent of the theory that if I buy a 4-6 pack or whatever of impy stout, and I don't like it right away, I'll age it for a year, and if I still don't like it, I'll try it once every year until I find where the crosshairs line up and then I drink it all. Then I make a mental note of it and act accordingly. I still have a Big Sky Ivan from 2015, a Yeti from 2016, and a Fulton War & Peace from last year. Should probably get around to cracking those soon.

    I don't let any beer in cans age. That's just my personal preference, but that's how I feel about Bell's Expedition Stout. Need at least two years, so those hops can fade away a bit.

    It's probably not a popular opinion, but I'm not a fan of Narwhal fresh. Same with Expedition. FIS, Brooklyn and Old Rasputin are great right out of the gate.

    Having my latest NE IPA creation, with Comet and Crystal hops :

    Still needs a little work. I got the haze down. The nose is sugary fruits, with an almost powdered sugar aroma. Surprisingly I'm getting lime and passion fruit (traditionally uncharacteristic for these hops), with hints of grapefruit here. Flavor is a stab of pine and grapefruit, followed by orange creamsickle, and a dank floral note that I suspect is from a late hop addition of columbus in the boil. Feel is medium-light, with an acidic and carbonated feel. If I had to give this one a rating I'd say it's probably upper 3's, I still haven't made an NE IPA I'd consider a 4 or better (the tipping point for buying again on commercial beers). It's a fun process though.
