Sapwood Cellars Grand-ish Opening (9/29)!

    Our Columbia, MD tasting room will be open for business starting Saturday 9/29 from Noon-10 PM for our grand opening. The following week we'll start our usual hours: Thursday-Friday 4 PM to 10 PM and Saturdays Noon-10 PM until our liquor license comes through (and we add Sundays and expand from there).

    Mostly hoppy stuff to start because of the quick turnaround times, but we've already got a few fun sour beers in the pipeline (Sauvignon Blanc saison, tart beer on chardonnay grape pomace, dark saison in red wine barrels with currants etc.).

    Here's the opening beer lineup:

    Ziparillo - 4.2%: Inspired by Belgian Wit, but without the spices. We added a touch of hefeweizen yeast to enhance to natural apricot-fruitiness of Amarillo. We added hops at the end of the boil, and in the fermentor at the start of fermentation to minimize bitterness and hop grassy flavors to allow the fruiter flavors of Amarillo to shine!

    Rings of Light - 4.8%: Hazy-juicy pale ale, dry hopped 2+ lbs of Citra per barrel, enough said.

    False Dragon – 5.3%: Spicy rye malt bolstered by a yeast blend that includes a small percentage of a spicy Belgian strain. Dry-hopped twice, first with Mosaic and Halltertau Blanc followed by one last blast of Mosaic. Both varieties have a bit of that Nelson Sauvin white-wine twang we love!

    Cheater Hops: SMC - 6.3%: 4.5 lbs per barrel of dry hopping with our three favorite American hops: Simcoe, Mosaic, and Citra. Oats, wheat, hazy, you get the picture.

    House Saison – 7% ABV: Fermented with a house culture of both brewer’s and wild yeast that has been together for four years. The result is lightly funky, and a little weird (in a good way) thanks to aged Cascade hops.

    I would maybe pump the breaks just a little with that statement. I thought everything on tap was solid, and really enjoyed Rings of Light, but they still have a ways to go to take that title.

    Sorry but RAR has never made a hoppy beer even close to rings of light. Once the sour program gets going it won't even be close.

    I am not bringing other breweries or beers into this discussion, but there are some great breweries in MD that have been putting out some amazing beers consistently. To dismiss their years of work and honing their craft is just silly off of a few beers you had last week. I agree the promise is there, and I want sapwood to succeed as much as the next guy.

    The problem is if you are going to tell me sapwood is not the best brewery in Maryland, you need to tell me who you think is better.

    From your instagram you are clearly a RAR and burley oak fanboy, which is fine. They each have plenty of fans. I will never like the jream abominations or rar sludge ipas.

    We do half-pours of everything for half the price of a full pour. No sample flights for now though.

    Too much time brewing, not enough answering questions online... sorry for the slow response.

    Rings of Light may very well hold the title of best hoppy beer in the DC area already. Can't wait to see what these guys do going forward!
