    Russian Imperial Stout
    All Grain
    5 Gallons
    1.114
    1.022
    12% abv
    65 SRM
    93 IBU tinseth

    Assuming 70% Efficiency

    16.94 lbs Maris Otter
    1.672 lbs Flaked Oats
    1.21 lbs Chocolate Malt
    1.0 lbs pils DME (ran out of mash tun space)
    0.9 lbs Roasted Barley
    0.682 lbs Carafa II
    0.594 lb C120
    0.594 lb C80

    2.0 oz Magnum 12%AA @ 90 min
    2.0 oz Fuggles 4%AA @ 60 min
    2.0 oz Fuggles 4%AA @ 30 min

    Used WLP001 in a 2L starter and WLP007 (irish ale) in a separate 2L starter. Pitched both at the same time.

    Used charcoal filtered Castle Rock water.

    Mash in @ 155 for 60 minutes
    Collected 7.5 gallons wort .
    Boiled for 90 minutes. Collect the amount of runoff you need for your own system to leave you with 5 gallons of wort at the end of a 90 minute boil. I live in CO, atmospheric pressure is lower here.

    At this point do your thing for fermentation. I let this one ferment in primary for three weeks before racking over to secondary and aging for 2 weeks on 2 rum soaked Mexican vanilla beans.


    Brewed on august 7th, bottled on sept 20th. Entered into Vail Big Beers and Barleywines Jan 10th, placed third in SVH category scoring a 38.

    Just got my scoresheet back from the 26th annual dreadhop and reggale homebrew comp. Scored a 42 in 13f. Judges notes include...
    aroma: grainy, roast not burned, plum, dark molasses, chocolate
    flavor: roasted barley, warm alcohol, earthy hops, bitter yet not astringent, nutty, dark chocolate, prune, dark caramel.

    Sounds awesome. May have to give this one a try soon. Did you use a 10 gal mash tun for this one?

    I did use a 10 gal mash tun. Not enough room for all grain.

    Hey, if it scored a 38 you must've done something right! I'll be sure to keep a few pounds of DME handy if I give it a try down the road, as I'm limited to the standard 10-gal igloo cooler as well.

    I cant wait to give this one another go now that I have a 15 gallon direct fire mash tun. Gonna mash short and high next time to get the mouthfeel I really want from this beer.

    This looks great! Thinking about giving this a go to break in my new oak barrel! What did you end up substituting for the DME since you got your larger mash tun? More Maris Otter?

    Yep. Make sure you have temp control, that Irish ale yeast can really get estery.

    Awesome, no worries there. Did you notice a major difference when you mashed high low versus your original mash?

    My high mash wound up being an estery mess. Lol. However the mouthfeel is super viscous.

    Your stated yeast in the recipe is misleading.
    WLP007 is Dry English Ale yeast. WLP004 is Irish Ale. Did you use Irish or Dry English?

    Good catch. I used Irish ale wlp004.

    Also, if anyone else actually brewed this recipe please leave some feedback here. I would love to hear other brewers experiences.

    Hey, I brewed this beer about a year ago. Used all of the ingredients except the extract. I added 3 more lbs of base malt to make up.

    Mashed per your original directions and used a 1 gallon starter of Nottingham.
    After a month transferred to 2 secondaries where I added 3 oz of oak to 1 and 3 oz of Apple wood to #2.

    Excellent recipe, thanks for sharing.


    Ps. No competition notes, but the usual rabble did enjoy it immensely.

    What yeast did you use? My next iteration may use us05 to get away from esters.

    notty, did not have 05.... but i do now, ill have to serch my ingrediants. its time to brew again.
    as i recall it s a dam fine brew and deadly if yer in a drinkin mood

    Yeah. Itll get ya drunk for certain. I didnt realize it's been 5 years since I brewed this beer. Time for a revisit
