Do you mean rocking my carboy for a bit before adding the yeast?

I’ve bottled 7 batches so far without a prob.

What yeast strain do you intend to use to ferment this beer?

    Cheers!

You do you. Stick with it, learn from your mistakes, and you'll get there.

I’ll echo what some others have said on sticking with it.

If it doesn’t turn out as hoped or expected you can post specifics about your adventure and there will be someone/s to steer you where you want to go.
After packaging and quaffing the beer you can help folks help you by providing as much info as possible about your process; equipment, full recipe, mash, hops schedule, yeast, fermentation temp, gravity readings, packaging method, how you transferred....you get the gist.

Download a free simple app like BrewShop or BrewLog.
Plug in your recipe. It’s super easy.
11 lbs of extract and a pound of mashed grain is gonna put you around 1.080-1.090 I believe. That’s a mighty OG. You’ll get a high alcohol brew if the yeast can handle it but I’m not sure it will be what you’re looking for. You’re gonna need more bittering to balance that high a gravity and you’ll probably be disappointed with the hop flavor/aroma getting lost in all the malt.

Try Yakima valley or hops direct for bulk hops. Extremely good savings when breaking ndown by ounce and they freeze well.

The only beer I have ever brewed that netted a gold medal in competition used lme and copious amounts of.citra

So the damage is done. Quick run down.

At the start of the boil I added all the LME. At the 50 minute mark I added 2 oz of cascade. 30 minute mark I added DME. 60 minute mark (flame out) I added the Citra, Lemondrop, Amarillo and Centennial. Let it sit for thirty mins. Cooled the pot down to 100 degrees put it in the corboy. Added the yeast (safeale US-05). Fermentation began the next day. Lots of activity in the air lock. I can smell the hops when I’m near the fermenter.

    Total
11lbs of malt extract (golden and light)
    10oz of hops
Two packs of yeast. Shooting for a more stress free cleaner fermentation.

Let us know how it turned out. Probably gonna be a little bitter for NEIPA. It looks to be leaning more towards a West Coast style IPA.

Did you pitch the yeast at 100f?

It’s no exact science but here’s what to reasonably expect:

    OG 1.084
    FG 1.024
    IBU 28
    ABV 8.7

The IBUs might be a bit low for that high a gravity beer. (You will get some bitterness with the FO additions but at a much lower %.)
05 might eat a few points off that FG though.
Absolutely love that hop bill. Hope it turns out great!

2 oz. of 5.8% (mid-range) Cascade at 50 mins is about 28 IBU in 5G of extract wort.
The Cascade I currently have in the fridge is lower at 4.9%.
I’m actually thinking there might not be enough IBUs for a 1.024 FG.
Should be plenty of juicy flavor/aroma though.

Yeah, I saw that 100° too. Hopefully he let it drop a little more before pitching.

I can’t tell you the exact temp I pitched the yeast at (my bad) what I can tell you is that the kettle was out side in 20 degree weather for a while before I put it in the carboh. The airlock has lots of action, many many bubbles. I can smell the hop bill when I get near it.

I dropped it in Brew Shop which has been the most accurate for my equipment.

    OG 1.076
    FG 1.016
    IBU 28.5
    ABV 8.4

So that looks good my man. Well done. Let us know how it comes out.

The ibu levels are light for my tastes, but who cares? You're gonna have a nice west coast ipa on your hands. Think it smells good now? Dryhop that mamma jamma and take a whiff

Was going to dry hop with 2oz of Citra 5 days before bottling.

Yep. I totally read that wrong. In my brewing I count down. So he added at 10min and F/O. Got it.

FYI I’ve never used more than one packet of dry yeast and have never had a problem with good fermentation. I always do 5 to 6 gal recipes. US-05 is very forgiving you definitely don’t need 2 packs.
