    I must admit there's a large number of people that seek only the best beer. More is likely to lose 60%+ of their customers even if the beer is relatively similar to before.

    I mean, more brewing was a thing before Shaun was ever a piece of the puzzle. They will continue with business as usual. It’s not like they were depending on him from the get go

    Most of mores customers are local villa park families. Beer enthusiasts filter in, but much of the business there is local

    there were dozens of brewers interviewed before Shaun got the job at more....

    I guess it depends on what you mean by “a thing”. More was a business before Shaun... more was not a successful brewery before Shaun

    I get it, but they’re dumb. Knowing the name of a head brewer is a new thing, and really shouldn’t matter.

    John Laffler left goose island in 2012. The BCS barrel program seemed to see halfway decent results in 2013 and 2014.

    People line up for benthic every year (and big hugs preciously). I doubt 5% of the people have any idea who the brewer is. They just know it’s half acre, and half acre makes good beer.

    More will be fine, especially once people realize the beer tastes the same.

    If you want to use a cooking analogy, I doubt Emeril Lagase has developed a menu for Comander’s Palace in decades, but Its still his restaurant. About 500 people have probably made “his” gumbo over the years at the restaurant and served it to customers though.

    I would disagree. They aren't moving crazy amounts of 4 packs on a weekly basis from locals.

    True. But they’ll sell out out every 4-pack they make.

    There’s no difference to the bottom line if it’s 2 days or 2 weeks.

    And a brewpub/taproom makes the the hughest ROI on draft beer sold on-site (which seemed to be a major point of contention that caused this whole Shaun leaving thing).

    It will still be a dope place to grab food and drink.

    More didn’t opperate as a brewery without Shaun making beer there, so this technically is also incorrect

    Actually no one was named head brewer. They are all just brewers, probably so people don't lose their shit if they do great brews going forward and someone else leaves. Pretty smart on their part.

    Actually as I stated above, John the previous assistant brewer has been named the head brewer

    I've brewed a fair amount of beer. I've won two World Beer Cup medals and a couple other minor crappy awards... and I can't even begin to write how much I disagree with these statements. On a small scale... on a More scale or a LZB scale or a RAM scale or a Mikerphone scale... the equipment itself is like a chaos simulator. For every 3 things you think you understand, some four new variables present themselves. Sure, you have a constant RO-based water source... you have control points based on gravity, based on pH, based on various time benchmarks for run outs and sparging... but you have no control over malt lots... over hop lots... and even once you think you do have control over all of that, a storm blows through and drops a branch over the power line that supplies juice to your building, terminating the supply to your glycol chiller and allowing everything to live 5+ degrees above your designated temperature until the utility can make it back out to hook everything back up. This is far from the idea of pushing a button on one side and watching wort flow out the other side.

    It isn't the equipment or the recipes that make the brewer. It is the ability to break everything down into incredibly small steps and iterate/increment/tinker with an insane amount of patience, while logging the results. This is the constant. When you listen to Shaun talk about small changes he is making or Nate from Treehouse or Neil from Weldwerks... it is all about controlling everything you can, noting everything you can't, and tracking everything (no matter how seemingly unrelated it might be).

    After listening to Shaun & Evan on Average Joe, I can say that I appreciate where their heads are at when it comes to business & getting their beer out to a larger market. The idea/concept of standing in a line for beer (or anything) has always escaped me (especially if you aren't guaranteed anything).
