    I do a shitload of smoking at the restaurant. We have a massive smoker. I smoke ribeyes and slice and serve them for a House French Dip. Applwood and hickory are the main woods. I take my ribs off at 115 and let carry over cooking do the rest. Realize this is a 12 to 15 pound export rib that I debone and smoke the ribs separately. Your tri tip looks delicious. A little lean for smoking but your method of quick smoke and sear is really good. Cheers!

    Yeah at 245 for 2 hrs you cant get a crust, so a quickie at the end does fine. The wood was the best combo i had available. Lean is the Achilles heel for tri tip. Finsh temp is important, you know that well. Thanks.
