Just kegged my first batch of beer. Comments?

    Hello everyone, I am new to brewing.. just kegged my first batch of beer, all grain (Modern Times clone- City of the Sun) My OG was a little low & FG was high so that got me on the site reading prior posts.

    Estimated OG- 1.069, mine was 1.062 / Estimated FG- 1.013, mine was 1.024

    Two factors that I think are at play here. 1. I never calibrated my refractometer (stupid).... 2. I completely forgot to aerate the wort before pitching, rookie move.

    Comments are completely welcomed, I am here to become the best brewer that I can.

    Also welcome! It's best to provide as much detail as possible: grain bill, mash temp, yeast details, fermentation temp, etc.

    I am using the Brewer's Edge mash & boil with the recirculating pump.

    8lbs, 4oz Pale Malt (2 Row)
    2lbs, 12 oz White Wheat Malt
    1lb, 12 oz Pale Malt, Marris Otter
    5.3oz Caravienne Malt
    2.1 oz Acid Malt

    Mash Temp- 150 deg F

    Yeast- California Ale (White Labs #WLP001)

    Estimated ABV- 7.4%, Actual ABV- 6.5%

    ... Really leaning towards not aerating my wort I think. It's my first ever brew so, I suppose it could be any number of things though.

    Hydrometer or refractometer for your gravity measurements?

    Could be, but do you know any details about the yeast pack? Did you direct pitch and at what temp? Also do you know the date of the yeast?

    Direct pitch at 65 deg F... The manufacture date of the yeast is 2/23/19... I brewed on 5/5/19, best if used by date 8/22/19

    Is there any possibility that I could've cut off my primary fermentation too soon? I racked to the secondary and dry-hopped after 7 days because I observed that the bubble frequency in the airlock was about 1 bubble every 90 seconds and the kraussen had subsided. I only transferred to secondary because the recipe called for it.

    Calibration is important, but it's probably not the major issue. Refractometer readings, both the OG and FG, but especially the FG need to be corrected using a refractometer calculator. You enter both brix readings together into the app or spreadsheet, and it gives you the corrected OG and FG. That little specific gravity scale on (probably) the right side of your refractometer display is a little inaccurate for OG and a lot inaccurate for FG. The two big reasons are that refractometers are scaled for use with sucrose solutions (which beer wort is mostly not) and because the presence of alcohol alters the reading.

    ETA: If you didn't correct the readings, go ahead and do that and you'll probably see that your fermentation is actually finished.

    @VikeMan is likely right if you didn't correct your FG refractometer reading with a calculator, but your yeast pitch rate was also low. I use the Brewer's Friend calculator which estimates your pitch rate at 0.17M cells/mL/°P. Complete ferments certainly can happen with underpitching, but I would use a starter for this type of beer.

    Hmm yeah I am completely unfamiliar with making a starter.. I am going to look more into that today. I went on the recommendation of the dude at my homebrew shop and used (2) packs of that California Ale yeast lol ..... Now that I am looking back at the recipe, it actually says to use (4) pkg. Again, he swore that was completely unnecessary so I deferred to his experience.

    Two packs is obviously much less of an underpitch. Your F.G. might be lower as mentioned above. FWIW I would never use 4 packs of liquid yeast - too pricey. Definitely look into starters!

    Converting the gravities to Brix and plugging them into my favorite refractometer calculator, I get a corrected OG of 1.060, a corrected FG of 1.009, an apparent attenuation of 85%, and an ABV of 6.5%. Therefore I think we can call off the search for an explanation of the low degree of attenuation. The yeast may have been underpitched, the wort may have been underoxygenated, whatever, but 85% is not an unacceptably low degree of attenuation. Quite the opposite.

    I think the FG issue was likely addressed by the refrac correction and the OG issue could be a combo of calibration of refrac and mash efficiency variance.

    A philosophical word to the OP: when the numbers don’t add up, the first thing you might want to ask & answer is “How does it taste?”

    I've watched a BUNCH of vids on how to properly use the refractometer and hydrometer since I've posted... I will definitely be more diligent on my next brew, which is happening this Sunday. I tasted it before I kegged, seemed bright, crisp and hoppy.. should be carbed up and ready to drink this weekend!
