Banana Esters in Foreign Extra Stout

    Actually that seems like an interesting challenge. Although I'm sure it could never result in a drinkable beer, I'm thinking about how you could try to approach one. No other roasted grain, obviously, maybe plenty of caramel to fill out the flavor and counteract the bitter roast.

    And if it's not recommended for black patent to constitute more than 10% of the bill, obviously you just need more of other malts. Therefore my 5 gallon recipe (all grain so I can pretend I'm not a loser):

    32 Maris otter
    4 black patent
    4 caramel 60

    OG: 1.209
    FG: 1.139
    ABV: 10.07

    Mmmmm.

    Hey, if you like burnt foods, keep a bottle of that with you. If someone tries to serve you a nasty un-burnt pancake, pour some of the good stuff on it. Insta-burnt pancakes and syrup.

    Ridiculously sweet? No, it was pretty sweet from the lactose, but by today's "pastry" stout standards, it wasn't all that sweet. Banana starch was minimized by using bananas that were very ripe. Not rotten, but extremely ripe.
