Flavors you've never picked up on

    You know, sometimes I long for butterscotch, but its never happened to me.

    I have smelled or tasted all of those in beer.

    Diacetyl is one that I have a high threshold on, but I can get it. The others are all easy to discern if they are there.

    As Jack alluded to, 20 to 25% of the population is blind to diacetyl. Everyone has something they have a blindness or weak area in the palate. That is why the pros have a sensory panel when evaluating beer. The good breweries make sure that they know that all of the off flavors have someone who can detect them.

    Soy sauce, except for in Triple Bock. That beer is a clusterfuck of hatred.

    If you want bandaid try Rook and Vuur from De Molen. It uses peated malt and is very scotch esque. That said, it was intentional. Most bandaid comes from infection.

    I know I am a noob but frankly I never taste any of the flavors other say they do. I just know what I like. But since I drink mostly IPAs, maybe the strong flavor masks everything else.

    Some off flavors/aromas come from the hops. Onion/garlic and cat pee are 2 that quickly come to mind.

    Definitely horse blanket. I mean, maybe I have tasted it, but I don't even know what that is supposed to mean.

    I have experienced many of the tastes that are already listed, and many that I haven't. But I'll add a new one that befuddles me -- oak. I don't mean bourbon-barrel oak, because I certainly get the bourbon flavor. But I've never had any beer that is aged in plain oak barrels to be able to detect a flavor that I would ascribe to oak. I'd love to find a beer that is both oak-aged and non oak-aged and be able to compare one to the other. Should I be looking for a woody flavor?

    "Complex" flavors...it just tastes what it tastes like.

    I only get that if it is strong, my wife hates Simcoe because that is all she gets from it while I am going "nice piny aroma".

    At the NHC, Stan Heironymus presented some work done in Japan that says there is a compound, 4MMP, that men usually get as a piney aroma, and women usually get as cat piss.

    Ok.... for the first time I get garlic notes on the nose of Tricerahops, DIPA. Have detected this on raw hops before, but not staying over in the brew until now. Maybe taste too.

    Strangely enough I've never a had a beer where I picked up lemongrass. But the other day I smelled lemongrass and and I could pick out hop notes. It happened in other scenarios too like while in the woods.

    I had never picked up leather before then I recently had a Westbrook/Evil Twin collab called 'Minigrowler' and boom, tasted like I was liking a brand new wallet.

    Similarly, I had never gotten bubblegum flavors until recently but Ive picked it up in a few beers over the last couple of weeks. Interesting how out palates change.

    never tasted it in a commercial brew but I was judging the American Wheat category at a BJCP comp a few months ago and holy f%&$#, half of those brews were diacetyl bombs! disgusting.

    I'll second that. A lot of Cigar City's year round beers seem to have a hint of tobacco. I wonder if it's their house strain or something. It definitely is interesting, though.

    dont think I've had a Samuel Smiths in almost 20 years...
    funnily enough, I work for their distributor her in VA.
