I am going to give it a try and make some Pork belly dumpling, steamed with Maui Coconut porter. Additional ingredients - cilantro, canned pineapple, hoisin sauce, pickled cabage, and brown sugar. What are your thoughts on this? I will post some pics later tonight

Sounds great. Make sure you boil the porter a bit to get the booze out before steaming. I'll be interested to hear if this imparts a lot of flavor or not! Interesting idea for sure.
So... it came out just okay. I think the issue was that the flavor of the porter (as well as other ingredients) just sort of died during the steaming process. This is a pic of pork belly being steamed with the ingredients. I also added some onions and ginger: This is the final product - I added more of the same ingredients inside the dumpling and steamed it again: Overall, it was just good. Not great. I think I need to increase the amount of each ingredient. Thanks for looking!
So by steaming you mean throwing it into a pot full of beer? Steaming would imply that you are using the steam to cook, requiring the food be raised above the liquid, to be cooked by water vapor and alcohol, which would make using a beer pointless.... Your dumplings are super pretty though.
First off those dumplings look great. To get more flavor I would suggest marinating the pork belly first. (DO NOT however use pineapple juice for the marinade.) A dry rub and quick sear could add a lot too. Marinate, dry rub, sear, deglaze, braise.
