    Galaxy is from Australia though, so harvest is usually in like April IIRC?

    @RobNewton I forgot about the hemispheric-specific harvest schedules for hops. And on further reflection I realize there's more to the flavor of hops than just how fresh they are, so maybe it's foolish to think about them the same way I do oranges or peaches.

    Times like these it would be great if the brew-world had someone with a scientific minded (Kenji Alt-Lopez-esque) curiosity and did a test to see how the flavor of hops affected beer when they were fresh, a week old, a month old, and so on. Or maybe the brewers already know this?

    If I didn't have a kid to pay for and a mortgage, I'd be right there with you dropping $40 a bottle without a second thought. You're fine as long as the smoking hot canadian model GF gives you the OK.

    Whether or not its worth $43 is very debatable but having heard Kyle talk about his process, these stouts are pretty expensive to make. For starters he generally boils ~12hrs which really kills the yield, the rates of the treatments also reduce the yield further and then sourcing the coffee on that particular bottle comes from auctions rather than like wholesale.
