    Apparently my Dad's cousin started up a brewery in Grayslake, they are having a tasting on May 19th. It looks like just your standard pale ales and stuff, but I'm gonna brew a collab with them to try to broaden their horizons and hopefully start making some more interesting brews.

    Where will this new establishment be (he asked with anticipation, knowing that anything in Grayslake is a quick bicycle ride from his front door)?

    Hmm... 'pears to be a private residence, based on the web site's calendar page.

    yeah, it is at his house. They are going to move when they get bigger, but apparently they have a license to sell their beer. It is a nanobrewery atm.

    Oh man the hockey theme has me hook, line, sinker. Make an imperial stout named after Stu Grimson! Grim Reaper Stout or something... Are they open for bottle purchases or just doing test batches?

    He said he had like 20 cases of various stuff. I know he is distributing to WI for sale at some bars in Green Bay. If we did a cherry beer I would call it "Blood of Malarchuk". Grimson would probably suit though because he is a lawyer.

    Does he sell from his house (if that's even legal)? As said, I'm probably half-a-mile from him.

    With this enthusiasm to venture into bigger production, what sort of equipment is he using at this stage? Some big set up in the garage? Talk about taking a hobby to the next step (as we've all dreamed).

    Such a mysterious tasting. Where do I find the treasure map to find the location? Is it at the house or somewhere else?

    Once you get to the web site from the Facebook page (http://www.lightthelampbrewery.com/Home_Page.html) click on the calendar link, scroll over to May, hover over the 19th and you'll find the address. Yes, it's the home-base.

    i guess so, i only found out about it this weekend so i am not too sure, I just know they have a licence to sell it. I already contacted him about brewing something. If they want to grow in the Chicago area they will need something more than a hockey-themed name, namely bigger beers.

    If they want to grow, period, I think they need expansion more than anything. Supply and demand will be difficult from a home operation.

    Sweet. Are they scouting locations? At one time there was talk about Mickey Finn's opening a second location in Grayslake, but I'm not sure where they were looking.

    'Course, having a brewery within such easy access may not make my wife happy! :slight_frown:

    I'm near Grayslake, sounds really cool to me. I think you guys should maybe try a wheat doppelbock for spring (aka Aventinus)?

    Or maybe a hopped-up bock? Hmm, not sure I've ever tried something quite like that! Maybe you can create a whole new style.

    Alright so fast forward to now, I am the brewer. The taproom will open at 2:30pm on Saturday, December 1st. 6 beers will be on tap to start, an Oktoberfest, Pale ale, Red ale, Blonde ale, IPA, and Oatmeal Stout. The Ofest is a pretty standard American take on the style, the pale ale is a bit dark and hazy medium to low bitterness, the red ale is malty with a touch of hops, blonde ale is brewed with belgian yeast, corriander, and orange peel; it isn't a witbeir though, the IPA is primarily hopped with zythos and has a nice bitterness and some pasison fruit in the aroma and flavor, the oatmeal stout is a smooth session stout just under 4%. There will also be a keg of Citra Pale Ale which was the first recipe that was mine and it has a high bitterness and a juicy hop flavor and aroma. There is a Christmas Pale Ale with piney hops and fresh galangal coming near the holidays. Stop by and let us know what you think and what you are looking for as far as new beers.

    I still have the cherries in my freezer. Chances are this beer will happen some time soon, but it will take a good while to age.
