Optimum time to open these 'cellared' beers [2020]?

    A few years ago, once I learned that aging or 'cellaring' a beer was a thing, I began collecting the odd bottle here and there. Mostly this was done with the intent of doing my own vertical tasting so that I could see for myself what difference the cellaring made to the beers when tried side by side, or at least back to back.

    I'm in no rush to open any of these, as I can obviously add more as the years go by, but I don't want to over-cellar a beer so that it becomes spoiled, or well past its best. Here's what I've got in my cellar and please advise if you feel I shouldn't age any of these further (in which case i'll crack them open ASAP!):

    2012 - Dogfish Head 120 Minute IPA
    2013, 2015, 2019 - Ommegang Three Philosophers
    2014, 2018 - Goose Island Bourbon County Brand Stout
    2015, 2019 - Founders KBS
    2016 - Panil Barriquee Oak Aged Sour Red

    You’d probably want to crack into the 2015 KBS for sure. I have about 3 2015’s left and cracked into one recently..the coffee component has almost completely faded. It’s still a good beer, but no where near as good fresh imo. I also cracked into a 2014 BCBS a couple weeks ago and it’s drinking very nice right now. I’d crack into that one too..

    And finally, on the 2012 120 Minute, I’d drink it now. I think 3-7 years is a good aging spot for this beer.

    Thanks for the reply and the advice!

    I tried the two KBS a day apart, and I had the 120 minute IPA. I made notes as I enjoyed them so I can post reviews someday somewhere (I've never posted a review before so not sure the ideal place). All 3 were still great though. I plan to crack the BCBS 2014 very soon.

    Any advice out there on the 3 Philosophers?

    Unless you've previously drank cellared KBS and liked it - I would drink the 2019 bottle ASAP. I think this beer is way better fresh.

    Like the label says, the 120 Min can go a decade, I drank an 11 year old bottle last year that was tasty.

    Bcbs, I opened an 09 a little under 2 years ago. It was incredible. I think you’re safe to go a while on the 2014.

    KBS, I’d crack the 2015. I just did a 4 year vert when the 2019 came out and the 2016 had already lost a lot. I still really enjoyed it, but I think 1 year is the sweet spot.

    3 philosophers I’ve only ever had a few years old, but honestly I like my quads aged a bit. I’d love to hear your notes on the 13.
