Anybody cellar Sam Adams Thirteenth Hour

    Its got Kosmic Mother Funk in it so im wondering if i let this sit would it turn sour?

    Hmm that sucks was hoping with the brett in it in 2 years id have some good sour flavors

    Lacto can sour a beer depending on other factors such as abv and ibu's. It will likely work to sour the beer but only a little bit. Brett will just become funky. The two play off one another very nicely. If the beer isnt already sour I am not too sure how much work the lacto will really do at this point in the game.

    Its a belgian strong dark ale thats been oak aged with brett and lacto. Ive had it fresh and you can taste a bit of sour funk but not strong hence the thread.

    It's only the KMF portion that was treated as such, not the base beer. That said, Sam Adams is a little ambiguous about the exact ratio of KMF:base....could be significant, could be negligible. I'd vote for the latter.

    I'm aging Samuel Adams Thirteenth Hour Stout now.
    Only because I'm afraid to drink it!

    Ha. At first glance I thought this one would age well, but I'm guessing I should save it from an even worse fate than I've already given it?
