    I haven't had the farmhouse BM yet but I don't like farmhouse. I have not had a Saison I've really been crazy about. This includes JK, Boulevard's Tank 7, which I liked the best but nothing spectacular a couple of Belgians. And if you don't like farmhouse, then the change of yeast will alter the taste and not in a good way.

    Yeah, bad. It ages okay (emphasis on okay), but there are reasons you use different yeasts for that. They aren't the first one to think of it.

    Sadly I fear if it's not brewed at a new facility, it's going to have to use farmhouse yeast.

    I am glad they have found a niche with their sours, but it makes me sad that the beers that really put them on the map have gone away. It also makes me sad we won't ever have a traditional IPA from them as I bet they would do a great job. I realize they strive to put out a quality product, but seems they have bound themselves down a certain path. I feel FH Wytchmaker and FH Black Metal will eventually fade away due to lack of sales.

    I don't know how OG Black Metal is still hitting the marketplace over a year later, but I'm glad it is and wish Wytchmaker was the same way.

    Now that you mention it I haven't even seen fh black metal recently. This sucks.

    If it makes you feel better, there was a palate or two ready to go out from the brewery when I was there this weekend.

    The farmhouse thing seemed like cross-contamination or infection relabeled.

    Infection would imply wild yeast or bacteria. Farmhouse or "saison" yeast is just regular saccharomyces cerevisiae and can easily be killed if need be. Plus they ferment mostly in stainless steel which should prevent infection. If they were to ever ferment with brett or bacteria in a tank then you have a chance of infection.

    This discussion, for the most part, maintained a level of decorum, and quite an interesting account of opinions from both ends... until the obvious JK "fanboi" decided to join in and get personal... they always get personal. YOUR opinions were fair and, IMO, quite valid.

    I'd ignore the personal attacks... there's always one in a crowd.

    I actually disagree. I think OG Black Metal was better than most impy stouts made today. I actually do like the farmhouse version, which i thought i wouldnt, but i like that it was a bit softened, and i actually think the farmhouse BM tastes more like other impy stouts put out today because it took away the character that OG Bm had and made it almost too drinkable if that makes any sense lol

    But i do like that they stick to their guns and have a plan that goes against most other breweries, which, IMO, will eventually make them stand out when all is said and done.

    If you cant please everyone, at least they can please enough of us beer geeks to make some money :wink:

    I also usually see cases and cases of unopened FMBM at specs arbor walk.

    well at least i did the last 3 times i went in.

    There is a reason that Black Metal and Wytchmaker only have FH versions now. I'm pretty sure it's not because they sell better. I think they have no choice. You say it's easy to kill, but if it was we'd have OG Wytchmaker Black Metal and Drink'in methinks.

    Just a guess, but there is most likely a reason ALL the beers use Farmhouse Yeast.

    The reason is JK wants to be a "Farmhouse" only brewery and exclusively use the Saison yeast. Atleast that is what I understand. Maybe Jeff can add some light on the situation.

    That is the way I see it. Purely anecdotal on my part, but it seems they don't have control of this "wild yeast" they use and don't have the time, energy, or ability to isolate their original regular lineup from that yeast. So they just made everything "farmhouse" regardless.

    They have said, from the beginning, that their goal was Farmhouse Table Beers. This is why everything is farmhouse yeasts. The OG stuff was to fun what they were originally going for.

    I just dont think they realized how great the OG stuff would be and that alot of us would be clamoring for the OG over the farmhouse.
