Buddhas brew was fermented with English Ale Yeast & Lacto, according to the bottle, so
the thought is not too farfetched, really.

West Lakeview Liquors has quite a stocking of Jester King here in Chicago, the owner is friends with the JK guys and they somewhat regularly get cases of random bottles from them.

However, JK seems to have stocked them pretty well recently, smart move considering they were at FOBAB and Zwanze day at West Lakeview Liquors drew quite a crowd of beer geeks. Happy to see JK getting some more love up here where most have never heard of them and for them to be able to sell a couple bottles of some beers that are obviously ready to distribute besides getting labels approved. Plus, as a native Houstonian, it means I can now get to try some stuff from my favorite home state brewery semi-regularly.

Of course! It kind of stinks, but to be fair I believe about one funk metal case made it up, and probably the same for Uberkind. There certainly is some Wytchmaker, Noble King and Petit Prince sitting on the shelf, but it's not like their limited releases are as available as they would be in Texas.

The tiny, rounded, colorless one-celled plant called yeast floats through the air everywhere, but it is responsible for making all our cakes and breads rise to a nice, fluffy texture. This happens because yeast creates chemical reactions on the starch and sugar in the cake or bread batter. Here’s how it works.

Yeast cells reproduce very rapidly no matter where they are. This reproduction goes on through a process called budding. In budding, each tiny cell swells, and soon the swollen part separates from the main cell. The new tiny cell then goes on to grow to full size on its own and the budding process continues to repeat itself.

During this growth process, the yeast cells produce substances called enzymes. So when the yeast is added to cake or bread dough, one enzyme goes to work on the flour, changing the starch in it into sugar.

Another enzyme then takes over and changes the sugar into alcohol and a gas called carbon dioxide. This gas spreads through the dough in the form of bubbles.

As the dough bakes into bread and cake, the heat causes the alcohol to evaporate and the bubbles to break. This leaves the tiny air pockets in the final bread or cake, making it light and fluffy.

Before yeast was manufactured commercially, women did their baking by mixing flour, salt, sugar, and potato water, and letting yeast cells in the air supply the enzymes!

...it does something in beer too.

We pulled a case or two of Funk Metal and Das Uberkind! for FOBAB, Zwanze Day and West Lakeview Liquors. Almost all of the Das Uberkind! we have in bottles (about 200 cases) is going to Texas. We're in the process of scheduling a pick up date with our distributor right now.

Love to hear the ~200 case. Seems like that mark allows the product to be on the shelf in multiple markets for a few weeks. I got my Funk Metal tee in the mail yesterday. Just awesome artwork.
