    I can take just about anything...except for the wind...plays havoc with the burner unless I unleash it's full fury : )

    Brewing a centennial, chinook and cascade stout and a columbus and centennial ipa. Dry hoping a falconers flight ipa.

    Will be racking RIS to barrel as well as starting Belgian strong blackberry.

    Bottling Hoppy Red, IRA, whatever you want to call it. ~6.4%, 58 IBUs, 38 of them in the last 20mins. Amarillo, Centennial, and a bit of Citra. Moving Fruit Valley Heirloom blend cider into secondary, which will make room for the Solebury Orchards custom blend cider which I will be picking up.

    I know two BA's, myself and he can answer in if he wants, who will be joining the rest of Mohonk Homebrewers in making an an Old Ale for our barrel project. Luckily Tuthilltown is right down the street for killer bourbon and rye barrels.

    No brewing. I may grind up some grain for an upcoming la Chouffe clone and some for a RIS. Then I will enjoy drinking some of the tripel Karmeliet clone that we brewed a while ago.....It's tasting real good:slight_smile:

    My (still not yet famous) German style Kolsch is getting done on Monday. It should come out tasty after I drink about 4 gal of it within the first month and wish I waited a little longer.

    It was a great brew day, the 4.5 hr boil was a bit lengthy, but fun.

    Brewed up a Chocolate stout, extract with some extra sugar, should come in about 8% ABV. Going to add about 1 cup of bourbon in the secondary and some vanilla beans a few days before bottling. Also putting labels on my Dubbel that has been in bottles for 2 weeks now, to give out as x-mas presents at the office.

    Brewing a very hoppy Tripel with Falconer's Flight 7Cs and Simcoe. I'm pretty excited about its potential, but fermentation is really taking a while to kick in. I checked gravity about two hours ago and it hasn't budged since I pitched (been 70-74 ever since). I've heard that WLP-500 can take a really long time (48 hours) to get going, so I'm not too concerned. Beyond which, it looks like a healthy yeast cake is pretty well on its way to forming in the bottom. Really hope it comes together -- I'm not likely to get good quantity of those hops again any time soon...

    What was your OG? Did you make a starter?

    OG was around 1.095 at the outset. No starter, but I pitched two vials. I'm regretting not making a starter, of course.

    I think you will be alright. It may be a bit underpitched, but should start in its own time. I recently had a dark strong take its sweet time starting....about 48 hours..... My fault tho, couldn't control the chiller temp, brought it down too low. :slight_smile:
