LF: Stone IPA clone

    thanks, I'm not scared of the crystal malt police. bring on the peanut gallery. Dare I mention Agave nectar.

    Here I'll save them all the trouble of commenting by critiquing Stone's recipe for you as they would if you were to post such a recipe:

    1) "This is a shitty example of a 'west coast' IPA."
    2) "Too much crystal."
    3) "Use Chico yeast instead."
    4) "Not enough late boil hops."
    5) "Nowhere near enough dry hops."

    Am I forgetting anything, or does that just about sum it up?

    You forgot "Well, maybe Stone can make an IPA that way, but they must have mysterious processes unknown to homebrewers."

    I'll add that the "Can You Brew It" show has suggested that the WLP007 yeast would best replicate the Stone house yeast. Don't think they recommend that in the article.

    Posting a recipe on this forum is like getting trapped in a room full of zombies who are chewing on hop cones and chanting "more hops...less crystal...more hops...less crystal..."

    Reminds me of a thread I started a few years back on the old forum entitled "What's the deal with crystal malt". That got some activity if I remember correctly :slight_smile: FWIW I am not a member of the crystal malt police when it comes to IPAs. However too much crystal in some more malty styles like a bock for example can lead to a sweet syrupy mess.

    That's far less than 10% crystal. Doesn't seem out of whack to me, and I believe homebrewers completely abuse crystal malt. Did I miss some threads somewhere?

    Not sure how I missed that article (not sure when I started my subscription). Thanks for the link. But I gotta say, the Pale Ale recipe uses nearly 2 lbs of Crystal in 5 gallon batch! That's nearly 20% of the grain bill. And a mash temp of 156! Not trying to play malt police, but what is the secret to brewing something so damn drinkable with that recipe? Either I'm doing something very, very wrong, or this recipe was a cruel joke on the home brewing community. I can't believe it's simply technique.

    maybe it's a fake recipe maybe stone dosnt want us too clone there recipes....makes me wonder...

    Did they ever post anything with a Levitation Clone? I tried that over the weekend side by side with their Pale Ale and much preferred the Levitation. Their PA was too sweet for me.

    Yes, there's a Levitation recipe in the 'The Craft of Stone Brewing,' a copyrighted work which I highly recommend purchasing, and which I hope Greg K will not sue me for quoting from.

    8.5 lbs two row
    14.4 oz crystal 75
    8.3 oz crystal 150
    1.3 oz black malt
    .28 oz columbus (90)
    .90 oz amarillo (10)
    .90 oz crystal flameout
    .26 simcoe oz flameout
    .77 oz amarillo dry (7 days)
    WLP 002 or 007, pitch at 72F
    Mash at 157F
    SG=1.048
    Target FG=1.013
