Pining for that taste

    My 'rule' is to drink all of my hoppy beers within 3 months. At 3 months the aroma is notably diminished but there still is some aroma and the beer is still very tasty from a flavor perspective.

    That has carried over the years, at some times there were other hops used.

    Now it is all Cascade just like when they started out.

    My PTE clone is ready to keg. I will one day after work. I’m waiting on a bottle of fresh PTE to do a side by side photo to post. The gravity sample I took today tasted very good and smell great. This was the first beer I ever used hops in the mash. Side note- I bought a Blind Pig kit to brew soon. It has wood chips to throw in the fermenter with the yeast. That seems interesting. This one is gonna be put on hold though cause I just entered a competition with my club. Orange Hat Brewery here in Knoxville is doing an open competition to homebrewers on Jan. 28th and the patrons vote for the best beer. The winner gets to brew that beer on their system and name it. I plan to do a brown ale on the Dec. 23rd for it and I want to keg condition it. Never done it so that will be fun.

    Are you going three months from bottling or three months after fully carbed?

    I have not, but I have friends who have. Last year we had a Gotlandsdricke competition where juniper branches are one of the main ingredients. The beers varied from brewer to brewer as to how piney they tasted. None were extreme but some more obvious than others.

    Three months after carbing but frankly that is just a two week differential so...
